    Wok for 22.5 inch OTG

    I will say this I have a hand hammered wok we use and have used for 25 to 30 yrs in the house and on the grill things a tank ! But if I had to replace it the plow disk is the only thing I would consider replacing it with !

    IF now Iam only askin a ? when I hold my hand over the top vent using water in the pan ! Why do I get water vapor STEAM on my hand holding it just few seconds over the top vent ? IF its a dry heat ? And since I get it on my hand why can't one assume it is also hitting the meat keeping it...
