Cajun Bandit Stacker for my Performer or just buy a WSM

I'm really happy with the CB setup. They're a good company to do business with and they make good products. I have their rotisserie set up, their WSM mods and also their stacker. I use my Performer a lot to do smokes on the weekend. The only mod I made to this is to put some probe ports in...

    WSM Hanging Ribs - 1st Go-Around

Chris: After a cook and dinner, the left over meats get put into a seal a meal and tossed in the freezer. When we don't feel like cooking during the week, we just boil our leftovers, to thaw them out, bring them to eating temperature and then chow down. When reheating, take care not to cook...

    22.5" disposable foil drip pans

Let's see, $1.25 / cook versus a few cents in foil and a little labor. I'm cheap, disposable pans would have to be $0.50 for me to purchase. Bad enough we're paying $10 bucks a bag for 20lbs of Kingsford. Next time the briquettes go on sale, I think I'll buy a pallet and put it in the garage...

Its not a WSM But ....

Looks pretty cool, maybe it's a WSM from the future! Where did you find it?

    Water pan Replacement

Charlie: It's really good to do the PBC method. It's the only way I'll cook my spare ribs. I got totally hooked using this method and the clean up is the real nice part, only need to wash the hooks.

    Hi from Whittier, Ca.

Hi Fran: Hope you like your WSM as much as I like mine. Whittier, CA caught my attention. I am a Diamond Bar ex pat. There is a plethora of information about your WSM on this site, hope you enjoy it. CraigW

    Craycort cast iron inserts

Edison: Those chicken pieces look great. Nice job and nice pic.

    Craycort cast iron inserts

JL We have the same issues in Southwest Florida, but it has not been a problem keeping them rust free. I have them on my Joe too, which does not get used as often as my performer. Even when the Craycort sits for a few months, if they're greased, they don't rust. I've found a good use for my...

    Reverse sear.

I'm looking forward to trying this process on a couple London Broils this weekend. I'm not one for marinating to achieve tenderness. I do like injection and letting the meats sit overnight. My London Broils are usually good, but when they're on the medium rare side, they get kind of chewy, so I...

Has anyone tried using a 14.5 charcoal ring in a 22.5

David: I've been playing with this set up the last few months. I do use a digiQ DXII which helps a lot with the temps, but I think one can do just as well with the vents alone. Anyway, this set up with a charcoal ring, heat deflector, bottom rack with a water pan does a nice job smoking meats...

A question on Weber nomenclature: is "Kettle: and "One Touch Gold" the same thing?

Dave: That's pretty much the way I understood it too. If it's round and shaped like a kettle then it is probably okay to call it one.:)

    WSM Hanging Ribs - 1st Go-Around

Thanks Glen I have a fabricator building my hanging rack using 3/8" rod. Probably overkill. When it comes in, if it fits, I'll post a photo. Then I'll post another photo with some spareribs hanging on them. I've cooked more ribs in the last few months than I have the last three years. The wife...

    Reverse sear.

Porter House Reverse Sear First reverse sear on the Performer. Very satisfied with the results. Rubbed the steaks with my homemade Cowboy Rub, one of my favorites (coffee & SPG) and let them sit in the fridge, tightly wrapped in cellophane most of the morning for an afternoon cook. As they were...

Has anyone tried using a 14.5 charcoal ring in a 22.5

I'm going to give it a try with my hanging ribs and maybe a tri-tip. Seems to me it would be much more efficient for short cooks. I would think that when you put wood on it, it will get burnt versus burning half the briquettes in a 22.5 ring.

    Temp Control

Same here, I have two pit probes, one on the DigiQ and another on the ET 732. The dome gage is 20 degrees below both my pit probes. CraigW

Complete beginner with Weber Smoker. Help!

Hi Angie: Welcome. In addition to JR's notes, I find Youtube a very viable resource. You'll run across a few idiots making videos, they're not hard to spot, but there's a lot good individuals making videos that have good information about preparing meats and smoking techniques. CraigW

Cajun Bandit Steel Door for WSM 18.5 -- Not Good

They are great at CB. Send them an email and I'm sure they'll send just the latch. Might pay a little extra for processing and shipping but whose fault is that. I just did the same thing with the CB stacker. I did not think I would use the charcoal ring and heat deflector. Later I decided it...

Is the Mini Chimney Starter discontinued?

I saw a whole shelf of them at Ace Hardware and after just buying one from Amazon, landed price $28, Ace had them for $12.90. I like the little thing, great way to start a handful of briquettes. CraigW

    BBQ Dragon

The reviews indicate it works well when it works, key work works. Seems many have encountered some durability issues. For me, I don't see where it is that superior to a chimney and a little time. Maybe if it was only $15 I'd have one for my arsenal of other other BBQ toys. CraigW
