    BBQ Pork Spare Ribs

Hi Ryan, Welcome! I have not tried smoking anything but baby back ribs and pork shoulder. I just found it curious that you can smoke ribs in 3 hours. It usually takes me about 6-7 hours to smoke baby back ribs on the WSM.

    Need help with Catering Pricing

This is a good debate. I for one rather pay a little more for something. I`ve always been that way. I don`t even look at prices when I shop for food, if I like it, I buy it. Also, I`m looking into just making a handful of things really well and thats it. I don`t want to be the end all, be all.

    Need help with Catering Pricing

The per head sounds good. To answer Pauls question, this is for a friend who is really into my BBQ. She often takes my stuff to work and shares it with her co-workers. They love it so this is for a party of people who have already had my stuff and are requesting it. It could turn out to be an...

    Need help with Catering Pricing

Word is getting around that my ribs and pulled pork are "up to snuff". I was asked yesterday if I did catering. I excitedly said yes! I`ll need to price something for a small party of 20 people this week. The party is in 3 weeks so I have plenty of time to prepare. The "customer" said they...

    Weber One Touch Portability

I`ve hauled my 22 1/2 plenty in the back of my Honda Odyssey filled to the rim. Someone suggested removing the legs... you could do that, its easy enough. I usually back my car so tight for trips which includes two coolers: one for alcohol, water, gatorade and such and cooler #2 has a weeks...

New 18 inch WSM vs. old, do you see enough improvements?

My first improvement to my "old" WSM was a $40 thermometer. There are other improvements I would like to make to my WSM but I can live with it as is. When it comes to cooking gear, I`m of the school that the more you cook with a certain unit, the better the food gets. Its sort of like the old...

    Smoked Chicken?

Its Sunday night, put 2 dozen drumsticks on the WSM around 10p Eastern time. Never done this before so I`m not sure how long it`ll take for them to cook through. I`ll give `em a look around 1a.

    New WSMs for 2009

Chris, Thanks again. I know I thank you a lot but you just go so far over the top with this site and feedback for us WSMers... I was just reading about your visit to Weber on the 25th... exciting stuff. Keep up the great work! EB PS-I was checking out the photos from your Weber visit, its...

    Smoked Chicken?

Just thinking about smoking some chicken legs. Is this possible? It is worth the time? I`m thinking of marinating them in some olive oil, lemon, rosemary and garlic for about 24 hours, then smoking over apple wood. Ideas?

    are wsm-ers' lazy as I

Glad its not just me. My issue is after I take the food off, the last thing I`m thinking about is cleaning the WSM. Pork shoulder takes some time to prep before serving and so do my ribs so I`m not really guilty of laziness, its just that the food takes priority. I went away for two weeks and...

    Anyone not use Minion Method?

I use the MM when I have lump coal but sometimes I have to bite the bullet because being in Brooklyn, NY, getting my hands on lump coal is not always possible so I have to use K which lets off this foul odor when using the MM. Just this morning I had to refuel for the WSM while I have some...

    "Craziest" critter you ever smoked?

Goat was the most "out there" meat but my in laws are old school Sicilians so you can imagine some of the stuff. One night they tried to sneak some rabbit in me, saying it was chicken. I was on to them. I don`t eat anything in the "rodent" family.

    Wednesday Morning Smoke w. Pics

Hey Bob- One shoulder averages 16 hours for me. The last time I did two, it took about 20 hours. I go by the meat thermometer though and let hit 185, then I`ll remove the shoulders, wrap them in foil for 30-45 minutes before shredding. Looks like your son is going to enjoy BBQ too. My kids love...
