Happy Holidays To All - What's Your WSM Doing On New Year's Day?

Traditionally we make a $200.00 pot of Gumbo (king crab legs and claws, lobster tails, jumbo shrimp, italian sausage and chicken wings with all the mixings) along with delicious sides and appetizers. This year will be the same, but adding a 5lb brisket and a couple rack of ribs

    Apple brine turkey recipe

Firstly, Happy Thanksgiving everyone! Smoking a couple yard birds today using the said recipe. A couple questions: Recipe/brine calls specifically for a 12-14lb turkey. If I have a 10.5 lb'r, does it make a difference with the brine time? I still went the full 24 hrs. Also, doing 2 Turkeys...

    WSM: Mr Dependable

Well, among trays of assorted food, the pulled pork was emptied in about 30 mins...if that. It was great to hear people off in the distance talk about how good it was. My cousin is dead set on buying a WSM now

    WSM: Mr Dependable

On my 2nd midnight cook and things couldn't be going any easier. 6lb butt on at 1130pm, reached desired temp just a few mins after 12. Set Maverick ET73 smoker temp at high 260 and low 225. The alarm went off ONCE all night (over 260) and it's been holding steady between 225-238 for the last 3...

    Midnite smoke underway!

Had my first one 2 weekends ago and really enjoyed it. Pulled pork sandwiches and nachos on Sunday late morning while watching football. Tonight I have a 5lb butt and a 5lb brisket going (about 15 mins ago). Hoping the butt is ready around 8:00am - that would be perfect. Give it an hour 1/2...

Overnight Brisket - ET-73 Losing Connection

Threw 2 6lb butts on at about 1230 this morning and had to bring the smoker closer to the house to get reception where I was sleeping. Never seem to get good range on this thing. It was my first midnite cook and I was pleased with the overall result and experience. And so were all the guests...

Who is doing there own Fathers day cooking ?

Smoked some lovely tri tip yesterday along with some chicken breasts Gotta say tri tip is fast becoming one of my favorite smokes. Relatively quick with a 5 min sear (grate placed directly over charcoal ring) to bring it to perfection. I've done 3 in the past 2 weeks - all with rave reviews.
