I used a couple sheets from a newspaper I bought near a sewage treatement plant to light my chimney and my ribs ended up tasting like crap!!

Try putting the clay saucer on the original WSM water pan instead of the Brinkmann pan, still leaves room for the bottom rack that way .

I just made up a batch to put on some ribs this weekend. I couldn't find my Ancho powder, so I added about 1T Chipotle powder and a combined T of curry powder, regular chili powder and cumin. Smells great and I can't wait to try it out. Thanks for sharing.

Ribs were the best...
I haven't gotten into making my own yet (made Steve Petrone's no 5 once, and it rocked!!) but my favorite off the shelf sauce is Jack Daniel's Original #7 sauce. Love it!!!!

I was curious when I saw it at Target so I picked up a bag. Fired up a chimney and it had a funky smell (like a cheap cigar) when it was firing up. I didn't want to take a chance in ruining my nice salmon fillet, so I dumped the chimney in my firepit. I did notice that I lit fairly quick...

I wish I did Larry! I have a couple kettles with the 2 rivets handles and and they were shot, I drilled a center hole in the handle bracket and tried a couple wood handles but no matter how tight I try to get them they are really loose. Tried to use some oak, walnut and ipe, but they didn't...
