    Favorite Q Tools? Tongs, Spatula, etc.

    I'm pretty partial now to the Weber Style line of stuff. Not that there's not other good tools, but their tongs and spatulas seem to work the best of anything I've yet used. Their super wide spatula is just the trick for getting pork butts off the smoker.

    Weber Performer

    The WSM will do some things the Performer won't do as well (owning one of each, longer cooks just won't play as well on a kettle). With a Genesis and a kamado the Performer won't really expand your abilities all that much. A WSM might.

    I saw this on the Weber twitter feed this weekend. If I were staying in one spot for a while, this would most definitely get me into a TownPlace over something else. I just hope the units can stand up to that kind of use- I worry that they'll end up getting pretty well destroyed within a month.

    When I did a couple pork butts a week ago, I pulled them off the smoker at 9, foiled them, then put them in a 5 gallon cooler lined with towels. They were still quite hot (too hot to handle with ungloved hands) at 11:30am when I pulled them. I figure they could have survived a couple more hours...

    Add Me to the Caster Club

    I put them on my 22" before I ever used it. Makes moving it around SO much easier. Took all of five minutes to do. IMO, it's a mandatory upgrade to make. Just very easy and makes life tons easier. If your WSM doesn't spend all its time in just one spot, it needs to be done.

    Got it for $350. There is a bit of a ding on the midsection (up on the lip), but it's mostly a scratch in the paint from when it was delivered. He threw in a couple bags of Kingsford too.

    How do you guys store your wood? I've kept the bags of chips and chunks inside the house, but that's going to rapidly take up more space than I want to devote to it. Do you need to keep the bags closed/airtight? Is the garage OK for storage?
