    Opinions on first few cooks.

    1. Stir the coals when they get low. I use an old handlebar. 2. Brisket is tough. 3. I don't use foil and they turn out better than any BBQ joint in the city. I don't know how they're too crispy in your case, especially if you're foil. 5. That's the rack for the vacuum sealer and deep freeze.

    There should be enough ash covering them that you should be able to smother your coals.

    Need pointers to smoke

    One of my friends has an older genesis with the east to west burners. He places lava rocks between the flavorizer bars and wood chunks on top of it, so he can keep the temps low and smoke going. He likes the results, but likes my WSM food more.

    You're filling your propane tanks right, not exchanging?

    I weighed one. It was had 15lbs of propane in it. The convience of the Kroger 1.5 miles from my house, still outweighs the 15 minute drive to have them refilled. It would end up costing me more to have the refilled at the hardware store in the end, as they have a giant Weber and BGE section.

    Wicker's Pilgrimage

    I grew up in that part of the country. The few times I've been back the poverty is overwhelming, which I was ignorant of as a kid. I wish the ownership of this little company was in the hands of those running it day to day. As most "better off" people there still live hand to mouth.
