    Indirect Grilling

Weber recommends coals on both sides. I did this using the coal holders that came with my performer. One side burned faster and therefore hotter. Not sure why this happened. Probably airflow. Also if Weber recommends the above way you are more inclined to buy more accessories for your grill...

    I have power

You must live NEAR Traverse City! I live in Muskegon Michigan and have friends that live in T.C. I am glad you have power back. My family grows asparagus in Shelby. Seeing yours pics, I can not wait for asparagus to "pop" !! With 75 degrees expected today it won't be long.

    Carnival Kabobs

Thank you for this recipe. We just had them for lunch. OUTSTANDING. Salty and sweet and delicious. Simple recipe where I don't have to buy a bunch of wild ingredients just for one recipe. I only had to buy the apricot preserves.

    Mods to new WSM 18.5

IMO handles are the easiest and best mod for the money. I think Weber would put them on but some one would spill hot grease on them self and blame Weber for it and sue...It is nice on long cooks to remove the middle with the meat intact and stir the ash and add some coal if needed. Some say they...

    Custom smoker

It looks like an awesome grill. I have to agree with George. It looks like a ton of work. If I wanted a smoker that big I would buy the large wsm, but thats me...I never have that much time for projects that large..

    Tri-tip questions

I live in Michigan. We have a Sams club near me. Costco is like an hours drive for me. Tx for the replies.

    Tri-tip questions

With several people posting about them I wanna try one. Tri tip is not like a chuck roast where they are on every meat counter. Are they shrink wrapped like a packer brisket or just wrapped? Where do some of you get them? Sams Club, super market or butcher or some place else? Im sure I could...

    Smoked Bologna

I use hickory and apple wood together for this. It works good.

    Weekend ribs

Them ribs look great man! If you have a GFS (Gordon Foods Store) nearby try the St. Louis style ribs they have. They are packaged by "Chicago Meat".. They are in the freezer section and come 5 slabs in a case. I buy nothing else now. It only comes out to like 7 or 8 bucks per rack and you get...

    Char-Griller Kamado Kooker

When my WSM wears out I might try a ceramic or keg smoker. There should be a lot of them in yard sales and on Craigs list by then! Relatives have tried other "cheaper" grills before and they dont last like weber products.

    Dragon Ribs

These ribs are awesome. I have always been a fan of Asian spiced food. This recipe is a keeper. I made 2 racks of St Louis style ribs this way and they are great. I am going to write the recipe down for keeps..

    Dragon Ribs

Its 8am and 15 degrees here in Michigan and I just put 2 racks of these on the WSM smoker. I have been wanting to try an Asian recipe for ribs. Judging from the taste of the rub and sauce I made yesterday they are going to be phenomenal. I will post later how they turned out.

What are some good store bought rubs?

I am going to stop making my own rubs for the most part. I was wondering if you all can recommend some decent rubs online or store bought. I like rubs with just some heat but not a lot of heat. I cook brisket, ribs, and pork butts... Just getting tired of having full cup boards of every thing...

Lid hold down on an 18.5" ots converted to portable

Lots of discussion on this around here. It would be a lot of work but it has been done. I just used 8 inch galvanized pipe for my legs and am happy with it. I just use bungee straps to hold the lid on when it traveling. To me 8 in. pipe is a nice height. You dont have to bend down too far and...

    Bring back the OTP/Jumbo Joe

dksmith17, I think some people like myself just want a grill that is more easy to transport for the rare occasion it is needed. I too have a standard 18 inch with 3 daisy wheels and wood handles. I had it since like the late 1980's .. The legs kept falling out when I would lift it or I tried to...

The Weber Era Seems to Be Over

Honestly, if they (Weber) loose the quality, it will be the end. I am sure they know this. Even if they move everything over seas, IMO it will be the end. Those of us that like a grill to last 30 plus years do not mind paying more money for them. If I have to buy an entirely 100% Chinese Weber...

Just another Saturday at our Butcher Shop!

That is some of the BEST MEAT I have ever seen! That means b4 you cooked it AND after! Hey, was that the same piece a meat that Fred Flintstone had that flipped his car? lol..

    Dragon Ribs

I just pulled 2 racks out of the freezer to try this recipe. My wife loves Asian flavors. I tried the parkay margarine/honey ribs last time and we thought they were too sweet for us so this is our next try...

Beef prices impacted by BBQ craze?

High feed prices AND high fuel prices and high demand for beef also low supply = perfect storm for sky high prices. High petroleum costs effect most every thing. Fertilizer for crops and transporting by truck etc... 5 dollar a gallon gas coming they say...
