In Paul Bertolli's book, Cooking by Hand, he gives a recipe for making Italian bacon called Tesa (on page 202). I'll probably try it now that I'm heading down the bacon makin' road.

I think Paul's advice is right. It's not difficult to take the entire burner assembly apart and you can take a paper clip and poke in each burner hole after you do the major cleanup.

Brian - if the diameter on the smaller kettle is the same as the WSM, I see no reason why it would not work. Hopefully EZ-Que will build some.

David - yes, the EZ-Que would probably just be a smaller version of the 22" kettle model and would be wonderful, I think.

It just dawned on me that you would not be able to use the BBQ Guru on a WSM (or any cooker) with a rotisserie. I love using the BBQ Guru with its set-it-and-forget-it ability. Guess I'd have to learn to cook without the Guru.

Well, in another thread I said I am not an expert on the guru and this proved my point!
I looked at that link, got out my Guru, and what do I see but a damper! I've never used the damper in any setting except 100% wide open.

Pat - I believe you could easily substitute tomato sauce or pureed tomatoes or canned tomatoes in place of the ketchup. I haven't tried it. If you can find Muir Glen canned tomato products, I'd use those. Just check to see if sugar is an ingredient.
