    How much brisket?

Yep. I think I will need about 40 pounds. I called the butcher today to plan ahead. Thanks,

brisket on two levels -- pan or grate?

Thanks. I'll be using the grates, no pans. And may move them around mid-way through the smokd. And I'll try to post pics. I'm a techno-idiot.

    How much brisket?

Thanks J, Great idea to use soup cans to hold up the third grate. Your math makes sense. I appreciate the comments.

brisket on two levels -- pan or grate?

Thanks Everyone, I'm going straight on the grates, probably one directly over the other, and maybe switch them half way through. Let them drip on each other. Got the WSM 22.5 yesterday. It's beautiful.

brisket on two levels -- pan or grate?

Hello again, I will soon be smoking a lot of brisket, and will be using both levels of my 22.5. When I smoke one brisket, I put the meat directly on the top grate, low and slow. How should I use both levels? Is it OK if the top one drips on the bottom one? Or should the top one be in a...

    Brisket quantity

Thomas, I like the way you think. Leftovers would be great. Maybe I need to do three packers? Can I do that on the 22.5"?

    Brisket quantity

Thanks Russell, I did not know about the Brisket Yield section. Your other points are exactly what I'm considering now. For instance, I want to do burnt ends. I had roughly come up with 30 pounds -- essentially what you have below. Do you know how much brisket can I fit on the 22.5"...

Hello Everyone, Doing a big smoke in a few weeks. How much brisket do I need for 50 people? I have a WSM 22.5 and an 18.5. Thanks, Gil

    How much brisket?

Last year I smoked a 14 pound brisket on the 18.5, and fed almost 25 people, but we ran out of brisket. Luckily I also had chicken. I just bought the 22.5. How much brisket should I smoke for 45 people? And while I'm at it, how much can I do on the 22.5 at once?

Dilemma -- WSM or Kettle conversion?

Thank you for all of the comments and suggestions. I haven't made any decisions yet, but this thread has been very helpful. BTW, I made my first meatloaf this weekend on the WSM. Smoked it with applewood. Served with sweet pototatoes, baked on the WSM with the the meatloaf. Yummy.

Dilemma -- WSM or Kettle conversion?

Thank Mike, for the reply. How can you grill on the WSM? Because if you can, that might be the best option. And can it get very hot?

Dilemma -- WSM or Kettle conversion?

Thanks Shane. I think you're right, and I'm inclined to go with the combo, but I want to hear some more comments. Then, of course, if I decide to go with the combo, I will have to decide between the Cajun and the EZ.

Dilemma -- WSM or Kettle conversion?

Hello there, I have a WSM 18.5. I love it. But I need something bigger. The problem is that I don't have much space. I'm considering a WSM 22, but am intrigued by the thought of getting a Weber Charcoal kettle (I don't have one now, and primarily grill on a Weber gas grill) and converting...
