Brisket quantity

Hello Everyone,

Doing a big smoke in a few weeks. How much brisket do I need for 50 people? I have a WSM 22.5 and an 18.5.

Type of participants(children, men/women)
Other sides/meats available
How presented - on sandwiches, just meat
What you will do with point

50 people x 4 ounce sandwich = 200 oz.
200 oz. / 40% yield = 500 oz
500 oz / 16 oz lb = 31.25 lbs
 
Like Russell says, there are several factors including types of sides (how starchy they will be), breads, etc to be served.

Brisket is a fairly rich meat so that plays into it as well. When I do a brisket, I plan on almost 50% shrinkage from raw til finished.

If you play the safe side, I'd have 8 ounces of cooked meat per person...and hope like crazy I'd have some left over to munch on the following week. Brisket just seems to get better the week after!

I did not know about the Brisket Yield section. Your other points are exactly what I'm considering now. For instance, I want to do burnt ends. I had roughly come up with 30 pounds -- essentially what you have below.

Do you know how much brisket can I fit on the 22.5"?

I like the way you think. Leftovers would be great. Maybe I need to do three packers? Can I do that on the 22.5"?

I am not one to pack too much meat on a grate so it is all mashed together. Albeit, the meat will shrink during the cook and make its own space, I don't like it to start that way.

Since you have two WSMs, I think I may run them both and select briskets using one per grate. Four 12 pounders would give you appx 24 lbs of edible meat...some left over hopefully. You may be able to get two per grate on the WSM 22 and allow for shrinkage. Test them on the grate raw and see how they fit...then decide.
