For baby back ribs i do the 2-1-1 method. 2 hours on the smoker, 1 hour Foiled on the smoker, and then 1 hour back on the smoker out of the foil. The last 15 minutes i sauce the ribs. I never use a thermometer on ribs. I do use my Maverick 732 on the pit because my lid thermometer is...
