    Nice job on the cook! i liked the foiled pulled pork better than when i didn't foil it. What's the point of the bark if you are shredding it? I foiled in a pan and was able to add apple juice, rub and honey and it was great.

    I have started to do the same. For 3.50 a box at home depot you can't go wrong. You get 24 cubes. Less mess than the paper ashes. So you get to light your fire 24 times for only 3.50. I can afford that :)

    was that butt pullable after 3 hours? i can't see how it got done in 3 hours with such a low temp. Your lid temp might be off. I know mine is off 60 degrees. So if my lid temp is at 235 it is really at 295.

    Stacking ribs?

    i always stack foiled ribs. I have the 18.5 WSM and i make 3 racks split in half. I use both racks for cooking them. When it comes time to foil i foil them all and stack them on the top rack. 2-2-1 seems a bit long for BB. I always do 2-1-1 for baby backs and 3-2-1 for Spares.
