    Surface rust on grates

    I just never really clean them to thouroughly, then they always have a good coating of grease on them to keep the rust off. the heat of the cook is more than enough to kill anything and a quick once over with the grill brush before I put on the food does the trick.

    6 hour burn maybe but that will use 20 pounds of coal. I looked very close at an offset wood burner but the WSM with the Weber name won my affection.

    When I overnight butts I usually switch top and bottom meet in the morning or after 12 hours. whchever it may be. They usually come out about the same time. 2 WSMs overnight is awesome, just out of curiosity did you have to feed like 100 people?

    I waited a week to empty my water pan and the grease in some spots got a bit furry. Dont sweat it, germs dye at 140 degrees so your cooker will fight the infectin on its own.

    What to do? Keep on smokin?, turn up the heat? (it has been 225 give or take 10 since 8 last night) or just do nothing because 15 pounds of butts takes time. Thanks for any help you can lend.

    Check out the other side of the WSM, there is a door for tending the fire. Seriously I have never had the urge or need to remove the whole thing. Like they say there is no wrong way, your end product will speak for itself. If it works for you go with it, there is no wrong.

    Wow! That was simply the best. Pork pretty much pulled itself and there was no fat at all to be cleaned up, it was 100% fat free (15 1/2 hours in a cooker will do that). Lots of left overs will be perfect for lunch the whole week.
