    If you are using water in the pan it will run cooler. I don't have a 14.5,but I do have a mini wsm I built..almost the same thing. I don't even use a pan now ...I just let the drippings hit the coal. I do run about 275 to 300.

    I have had mini for years and never had that problem when using the gold for grilling. I did add a expanded metal ring around the charcoal, but mostly for smoking on the mini. If you had the charcoal hot in the charcoal chimney, there is no reason for it not to be hot in the gold unless you...

    GrillGrate + Kettle

    Sounds like your GG are covering you whole cooking area. It will be just like a regular cooking grate ...hot over the coals and cooler away from the coals. I use mine on my Weber gasser and love them. I heat them up then cut off one or two burners. Super good sear and not flare ups.

    When I had mine I started just wrapping my pan then I put the pan in the corner and just cooked over the coals ...man what flavor.

    Using the 22.5"wsm like a stick burner.

    One more step...take out the pan and let the meat drip on the coals and you will have a large Pit Barrel Cooker.
