Mine is about three years old and used quite a lot.
Used Rust-o-leum High Heat Ultra. Very easy to use ..clean pot ....and a couple of coast. Really really held up well...just make sure it's the ULTRA..it's real glossy and matches the Weber Smokey Joe.
I've had mine for years and pretty much do what CaseT does. I don't use a diffuser much these days...just let the drippings drop on the fire. I do cook at 275 to 300 ..try it you might like it.
I made a charcoal basket and I fill it with charcoal . I take enough out to almost fill a small Weber chimney light it and let coals ash over. Pour on unlit coals...be sure to catch the temp on the way up so not to overheat. You should be able to keep a constant temp with the PartyQ. I cook...
Haven't used water pan in years....to messy. It is a good training tool, but once you learn to catch the temp on the way up, you will be ok. Now I use mine most of the time without a pan at ll...just let the drippings hit the coals.
I would love to find a deal like that. I have a min wsm I built years ago, but would like to have a 14.5 WSM. It is perfect for 2 people, but will cook a couple of butts. We are empty nesters and that is our go to cooker.
It does lower temps, causing more fuel use. Plus harder to clean up the pan. Heck I use mine without any pan or deflector...just let the drippings hit the fire.
The 18.5 is thrifty, but the 14.5 is a really thrifty.

When I had one ...I aiways used the gas assist.I just piled the charcoal over the flame and let the flame burn for about 10 minutes ,cut the gas off and when the coals got red I just spread the coals out. Ready to cook !!!
She is a beauty....That chicken looks great and I know you are going to have many more good cooks. They are very economical to run also. After a few cooks try cooking on it without a deflector. Cook at about 300 and let the drippings drop on the coals.
