    Cutting pork butts

I've always cooked them whole. There will be plenty of bark.

The Big Lie of supermarket brisket

HEB in Houston has USDA Prime packers for $3.97 per pound this week. I bought two for a cookoff I'm doing 9/6. I wanted to do one this weekend, but I can't justify the cost.

    Lowe's 2-pk 20lb Kingsford $9.88 - Extended to 9/3/14

They seem to be extending the Labor Day sales. I'm sure Lowes will do the same.

CL Score - Silver A - Which Flavorizer Bars?

I bought a SS set for my Genesis Silver C off of ebay and they are pretty stout.

Herb & Spice Storage & Replacement

There are two supermarkets near me that I can get many spices in bulk. I like spending $0.40 for a few ounces of spice in a bag instead of the $5 for the same amount in a jar.

    Smoking Brisket Point Only

I did a Google search this morning on this same topic. From what I see, cook time is int eh 4-5 hour range at 250. If you cube it up for burnt ends, you'd add that additional cooking time. I have one that I want to experiment with bacon wrapped burnt ends on.

Avoiding brush marks on the meats

At my last comp, I switched from a thicker homemade sauce to Sucklebusters Honey BBQ sauce. It is thinner and left no brush marks behind. It also got me a fifth place out of 103 teams. I used a silicone brush with the waffle grid inside.

    Happy Father's Day to me!

I have a grill basket as well, but I wanted to see if I could fit this grill pan and food on the grill.

    Happy Father's Day to me!

Dinner was great. I'll have to learn to use just sections of the grill since one chimney of charcoal doesn't seem to go too far.

    Happy Father's Day to me!

The rust is actually on the dome itself. The best way I could fix it would be to drill it out and bolt through into a strap/support piece. I don't want to do that to the old girl. The hook to hang it on the side of the kettle has also long fell off. A new dome would be great, but it's probably...

    Pizza Help

I haven't been using a stone at all. I spread the coals around evenly. I oil the grates and toss the dough right on the grates. I cook for a minute or two, then pull off. I flip the cooked side down, then add my topping. Toppings should be cooked beforehand. I then slide the pizza on the grill...

    Happy Father's Day to me!

The UPS guy dropped off my Father's Day gift a bit early. My 2002 Silver Kettle was about to die (handle rusting off), and I mentioned to my wife that I thought the bigger 26.75" one would be a cool replacement. She listened and the 60+ lb box was sitting in my garage. I assembled it last night...

Two of my Webers are dying

The hook on my lid fell off over a year ago when the wife dropped it while hooking it to the grill since the handle was hot. Salvaging the lid isn't worth it. OTS grills are about $50 on cl recently and I imagine that is probably what a new lid goes for from Weber. Reattaching the handle isn't...

Two of my Webers are dying

Unfortunately, after years of use, two of my beloved Weber grills are dying. The metal around the handle of my 2002 Silver kettle is rusting and one of these days, I'll be holding just a handle as the hot lid drops to the ground. My 2004 Genesis Silver C gasser is also rotting. The frame has...

Brisket Slicing Question (against the grain)

I like to flip the brisket over and look for the grain before I apply any rub. I make a score line perpendicular to that grain. When it is all cooked and the bark is on it, the score line is still visible and works great for being a guide on how to cut it.

BBQ Comp at MN Ren Fest

Last year, we heated up water in a pot over our deep fryer burner and poured it into a wash tub. I rinsed with water from a water jug. We had a travel trailer this year and the water heater and sink were super helpful.

    Got our first call!

It was actually TGCBCA. I haven't tried an IBCA one yet.

    Got our first call!

The neighbors and I cooked in our second year of the EMC Fair and Rodeo BBQ Cook Off in New Caney, TX. This is the only cook off we do, so we are more recreational than serious competition cookers. It was hot and humid, then rainy and windy, then humid again, etc. Love Bugs were out in full...

    Boston Butt Question

I'd be afraid of the pork drying out a bit once pulled and back on the smoker.

    Pizza! Pizza!

I tried grilled pizza for the first time a couple of weeks ago. I did not use a stone though and cooked it directly on the grate. I made the dough from scratch using a recipe from the Food Network. I rolled/stretched the crust, then put it on the grate for about two minutes. I pulled it off...
