    I Love Rancher Charcoal

+1 on Rancher. With the recent price increase of K, it's actually on par pricewise. But, being curious, will probably give the new K a try, and have yet to open the K-comp recently gotten with coupon.

    Commercial Chicken info?

Spatch a "all natural" "Young Chicken" this weekend. [Sorry, no pics - forgot to oil the grate and messed up the skin.] It was >= 5lbs, which seems kinda large. It was brined for 5hrs with the basic brine plus flavorings (garlic, lemon, thyme, black peppercorns, coriander, etc), and the...

    Can't get 350 in WSM

Best way to get to my WSM to HH cooks is to tilt the lid a bit. Propping/cracking the side doesn't seem to do much for me. HTH

    Need Help Grilling Vegetables

If we have zucchini, yellow squash, carrots, or cauliflower, and bell peppers, I typically rough cut (1/4-1/2in cut), toss them in salt, pepper, oil and parsley and covered roast (panned) till tender (20-30min). (First tried this in the oven, but our charcoal toys are just other hot box ;-)...

Rib Smoke with using lump for the first time......HELP! - UPDATED WITH PICS!

Dave: Have done spares w/ that temp range on my 2009 WSM lid thermometer. Sept Spares Nov 09 Spares Both cooks were lump charcoal (mesquite, what's cheapest/available to me), MM starts, waterless, just double foiled water pan, a few chunks of apple wood, and lid tilted a bit to get to the...

    First smoke (Excel20...sorry) RIBS!

A lot of us just double foil the water pan, no water and no clay saucer. One layer of foil for the inside of the pan. Another layer on top, creating a gap between the two layers. Just another idea.

    Wicker's Spatchcock Chicken Cook

Wonderful looking chicken. Am planning on spatchcocked chicken soon and would like learn a few of the finer points. Bob, you said: <BLOCKQUOTE class="ip-ubbcode-quote"><div class="ip-ubbcode-quote-title">quote:</div><div class="ip-ubbcode-quote-content">...used a skillet on top...

    Using left over charcoal

Leave the leftover in the ring. Shake as much ash as possible off. Fill ring with more unlit. Put some lit on top for a Minion Method start. I find this works really well with lump: unburned pieces stay hard and less ash to clog airflow. With briquettes, the unburned tend to crumble and...

    Saturday's SJG Brisket

Was inspired by all the mid-2009 SJS/G long cooks and the more recent mini-WSM work. My market had a 2.5# choice brisket on sale and thought it would fit in a SJG. Cook took around 5.5 hr total. Had some temp control issues (needed to refuel twice ;-) and also cooked plan B (smoked brats...

doing anything different this bbq season?

    1. Use less cumin. Overdid it on cumin based rubs last year. Now looking elsewhere for flavor. 2. Use the SJS/G more - wanna do a mini-WSM using it - but have get at it. Also, need to learn how to keep the fire hot while the lid is on. 3. Find a grilled/roasted chicken recipe that my wife...

Genesis Silver - Disassembly Help - QUICK!

The top lid is held on by a couple of pins that should be easily pulled (and can be re-inserted later ;-) by hand w/o tools. On my Genesis silver B, iirc, bottom and the cart are bolted (nuts and bolts) together and needs tools. Good luck and congrats!

    La Flama Lump

Haven't tried that brand (I use Lazzari and AceHW), but use mesquite charcoal all the time (grilling and smoking). The flavor is pretty neutral, and not as offensive (to me). My goto briquette is Rancher/TJ's - which seems a little more neutral, but is sometimes harder to get, and not as...

Heavy duty rod style replacement grates.

Got these for my Genesis Silver B about 8-14 months ago. They work well. They take a little longer to heat up, but leave killer marks. Mine show very little (if any) wear and tear. I also got the heavier flavor-izer bars. The thicker rods also seem a little harder to clean off, but that's a...

anyone else here cook for only 4 people tops and have

Got a family of four here too. If it's just a hunk of meat (tri-tip, salmon fillet, chicken quarters, lamb shoulder), then SJ* works fine. If it's lots of small stuff (Korean short ribs), or a variety of stuff, then the OTP (cheap man's Performer ;-) gets the work out because of the acreage...
