Is a Butcher better than the Supermarket?

Is buying steaks or even ground beef worth paying the extra cost from a butcher? Please be honest - does it really taste better?

How do I cook burgers evenly, and tell when they are done?

Cook w/ the lid on too. This will help with even cooking in the center of the meat as well as flare ups.

<BLOCKQUOTE class="ip-ubbcode-quote"><div class="ip-ubbcode-quote-title">quote:</div><div class="ip-ubbcode-quote-content">...About the only time I use a thermometer is when I cook a whole chicken, turkey, or large cut of meat. For burgers when you form them make a dimple in the middle for...

    Seasoning Hamburgers

For bacon burgers: Do you guys do anything special with the bacon? Or just fry it and put on top at the end?

ooooooo....George, I like the Lodge CI Hibatchi. Looked at those for a long time and havent pulled the trigger yet. Any trouble with flame-ups on that bad boy?

    Traditional vs Reverse Sear Comparison

I love the SJ for that reason!! If I'm only doing 1 or 2 steaks I'll use the SJ instead of my Performer. I'm curious on this debate too. I've got my traditional sear first, cook indirect (if needed) to doneness process down very well. I'm wondering if reverse sear would offer me any benefit...

Charbroil Cast Iron Kettle Grate Report

Its for 22.5 kettles (fits great on my Performer), and the center section is supposed to fit 18.5"kettles (too small for SJ, but fine if you cut the handles off the grate).

    Hot dogs galore

I think this is your best bet too. I would put 1 layer of coals over entire grate and cook medium heat direct. This will give you good throughput and not overcook. You just dont want them charred and split open. Mass hot dogs are barely worth the charcoal and effort IMHO. For that many...

Charbroil Cast Iron Kettle Grate Report

Cutting off the handles of the grate in the SJP is not a big deal. I think its worthwhile in this case.

Charbroil Cast Iron Kettle Grate Report

I sprayed it with Pam and heated everything up. The grill marks were much more dramatic and there was more nice crust. Overall, I think I'm happy with the purchase, and I'm sure I will learn some of the tricks with CI. The stuff I don't like 1. The center section does...

Charbroil Cast Iron Kettle Grate Report

The FedEx guy dropped off a Charbroil CI grate today. Most important thing: They dont fit Smokey Joes. See pic below. Box The cast iron is a little on the thin side, but the price was right. With the center section out, a chimney easily fits inside. With center section...

    Frozen Burgers

For an easy alternative, try just salt and pepper. Makes a remarkable difference over plain.

    Flat Iron Steak

Its about how much heat and fire is right underneath the meat and less about what the lid thermo says. IMHO, if you get a 2-briquette layer of grey coals (red glow and weird little flames in the coals) that extends past the steak on all sides, you'll get a good sear. For steaks, I get a fire as...

What do I do with these Hot Links?

I've got a package of Evergood Hot Links. Any suggestions on cooking them? Would the beer/onion jacuzzi I give Johnsonville Brats be good?
