Finally All Natural BB Ribs at Local Walmart

Before all I was able to find were brands with a certain percentage solution added for moisture. Within the last Month our local Wally has started carrying these! Smoked a couple racks last weekend and they were the best yet. Anyone have experience with these ribs? Thanks, Dan

Multiple Briskets on a 18.5 WSM

Should be the same amount of time just may take longer to get up to temp and may use more fuel. 2 or 3 8lb Briskets should take the same amount of time as one 8lb brisket.

    Water in the pan??

I always use water for low&slow smoking. Makes keeping the temps 225-250dg easy. For higher temp cooks like poultry I don't use water. I use water for about everything else. Dan

Second Job on New WSM - Salmon

I'm watching to see how turns it. I've never tried smoking salmon and want to try that recipe also. Good luck, Dan

Different Smoke Wood-Can a you Really Tell a Difference?

Got a newbie question. I've been using mostly apple with a few hickory chunks for smoke because that's what Chris A. recommends on the main page. I recently ordered some cherry and red oak chunks to experiment with. Can you really tell a difference when using different kinds of smoke wood...

I can't get my 18" WSM hot enough

Chris, I'm too computer ignorant to post s link but if you go to the main page Chris Alling... has link under "modifications" I believe. That's where I bought mine and I'm sure glad I did. Holds the same amount of water too. Dan

I can't get my 18" WSM hot enough

I've had trouble with some cooks they way you describe. Was there any wind at all? I have an angled patio and the wind whips from all directions. If there is even a breeze I have trouble as the wind sucks out the heat. On calm days my cooks are much more predictable. Also I've noticed since...

    Top Round Roast?

$3.69/lb at Mickey's T-Mart in Shelbyville. I was hoping to smoke it more like you would a brisket then slice it up. May not be a good choice for that so I'm anxious to hear from folks with experience with it. Dan

    Top Round Roast?

A local market has "Top Round Roast" on sell. Would this particular cut of meet be good to smoke on the WSM? If so any recommendations such as final temp to pull off, plan 1 1/2hr per pound like other meats?? I don't think I've read anything about smoking this cut of meat so wondering if its a...

    Brisket for Supper

I experimented with this cook. I bought two choice Briskets from Kroger that were 7lbs each trimmed. Yes....whole Briskets the smallest I've seen. One went on the bottom rack fat side up the other went on the top rack fat side down. Each had a different rubb too. But on my WSM at 2:30am...

Wipe down lid lip after each use?

The owners manual says to wipe down the lip of the lid and the upper lip of the middle section after each use. My WSM leaks a small amount of smoke from this area and has since new. I've done about six cooks on it and it stil leaks about the same. My thinking is if I don't wipe this area down...

    Smoking two Briskets?

Hi Steve, I got the 7lb brisket I mentioned in the other thread. Thinking I will invite some family over for brisket and don't think the 7lber will be enough for everyone so I'm going to get another of similar size to smoke on the bottom rack. I'm really anxious to try these small Briskets...

My first pic in the photo gallery

Sorry about the pics disappearing. I'm new to this stuff. I edited the post. Thanks for all the replies. I'm cooking another brisket or two this weekend and might take some pics then too. Thanks again Dan

    Smoking two Briskets?

Would it be ok to smoke 2 Briskets at the same time-one on each rack? I know the drippings from the top one will fall down onto the bottom one? Any negatives from this? Maybe the bottom one fat side up so the drippings would not hit the meat side and wash off the rub? Thanks much, Dan

    Kroger Brisket (Pics)

Is there a down side to smoking a brisket this small? I know the majority of folks on here recommend 10-13lb untrimmed packers so I'm anxious to see how this turns out. I drove 45min yesterday to my nearest SAMs Club and the smallest they had was 12lbs. I didn't know packers came as small as...

My first pic in the photo gallery

This is a brisket I smoked a couple weekends ago. First pic brisket rubbed down prior to going on WSM. Next pick is while slicing up. I think brisket is my favorite meat to smoke. Thanks for looking and any advice is welcomed, Dan

    Kroger Brisket (Pics)

First I'm relatively new to the brisket smoking and been trying to find a source for good Briskets in my local area. Today I went to Kroger and had a conversation with my Kroger butcher. I asked if they carried full packer Briskets and he said yes and that they weighed in the 6-8lb range??? I...
