    Same here. I usually don't foil till around 175-180°it, I like the long smoke time. Then i foil till done and let rest in a cooler for 2-3hrs. turns out super tender.

    I use the "Bear paws" works great. If you really go at it you can shread a butt in about a minute. I'll usually pick through it and get out a lot of the fat and junk so it takes longer. Way better then using forks!

    I've been using them for a while now and have never had that happen. i do notice a little bit of a smell to them, but not really bad.

    BBQ Mac and Brisket

    Smoked a brisket for this weekend and had plenty of leftovers. The wife cooked up some mac and cheese so I thought I'd add some brisket to it. Drizzled on some sweet n spicy bbq sauce, and a little bit of Bad Byron's Butt Rub. It was really good! I could eat that all day long. thx for looking!

    If I was going to get one just for me, I'd get the 48 i think. But I'm getting into cooking for others (parties, church bbq, etc.). The 48 would be great for family and friends.

    Got her back on Saturday evening! All sandblasted and repainted. also had the fire box flanges fix up and had gaskets put on. New fire grate, welded flanges on the cooking section doors, replaced all thermometers and had one installed on the firebox side of the cooking chamber. Thanks...
