    36lbs is over a pound per person and 8 of them are kids. I think I'd go with about half a pound per person, so 18-20lbs should be fine. In my experience I can't get the 325-350° range on the wsm less i remove the water pan.

    I agree with a lot of whats been said here. Whenever I smoke a butt or brisket its an overnight cook. The wsm is great at that. your first few you probably won't get much sleep, but as you gain experience you'll sleep just fine. You'll want to get a wireless thermometer, it makes live Sooo much...

    Don't be afraid of the overnight cook. If you know your wsm it should be fine. The wsm holds temp really well, and you should be able to get plenty of sleep. Fresh BBQ is best, not leftovers. you can do it!

    I do a 2-45mins-15mins at 275° for bb ribs. Just right. If ya like them falling of the bone more go a full hour in the foil.

    I cook my butts 250-275° a 9lb'er should take 12-14hrs. Might have to add some coals, but the 18.5"wsm can run for a long time on a full ring of fresh coals.

    I've added unlit many times. It will take your temps down for 15-20mins. On my 18.5"wsm I did the upside down mod on my door (can be found in the mods section on virtualweberbullet.com) Gives it better air flow to help startthe unlit. If your temps are dropping cuz your running out of coals add lit.

    When I first got my wsm I just cleaned off the grates and started cooking. with a new wsm I'd recommend using water in the pan to help keeps temps down to the range you want, then give it a try w/o water in the pan. I prefer no water myself, but try different methods and see what you like...

    I like doing BB ribs at 275° 2hrs, 45mins wrapped in foil, then sauced for 15mins.
