19lb bird - 5 hr cook

I've thought about this method - hold the bird vertical with a pan underneath. How to do it though? How to keep it upright?

    19lb bird - 5 hr cook

Apple brined, air dried, stuffed the cavity with apples, oranges, rosmary and sage, iced the breast per usual. Apple smoke wood. Usually I place the bird on the top rack (18.5WSM) with a pan on the bottom rack to catch juices for gravy. This time I used a disposable roasting pan under the...

    Maverick Probes

    FYI: I am using Thermoworks TW362XX spare probes for the TW362B at $8 each. Downside is length - 42". I measured these values. YMMV, etc. Temp(F) R(ohm) ~~~~~~~ ~~~~~~ 32.1 815000 212 13000 318 2650

Is there an ATC that has a differential temp feature?

Is there an ATC that does a differential temperature cook? I'd like to be able to set the cooker temperature at a minimum, say 225F and then have it maintain a cooker-to-meat differential temperature as the meat temperature rises. I do this anyway manually to reduce the time it takes the pork...

Blue Sky Stepper Damper thread - Breakout from RaspberryPi + LinkMeter blue sky

Last year I made a gravity operated flapper that covered the blower opening in the Blower Adapter HousingTM (AKA rabbit food dish). The hinge was a Dubro nylon RC plane hinge, worked a little bit to have no drag. The flap that covered the opening was some very thin aluminum epoxied to the...

    Maverick Probes

Two probes at 82F: 850 kOhm, 860 kOhm. They take a while to settle out.

    Maverick Probes

If I'm not mistaken the 732 probes are higher resistance and at room temp they'd be at the highest value. I'd be interested in seeing what happens if you hold a capacitor in there across the probe connection, say 1uF or something.

    Maverick Probes

ET-732 probes have longer plugs than the usual mini plug. Any chance you are inserting them too far?

What's cooking for Labor Day weekend?

This is a good weekend for cooking. Three slabs of babies and some ABTs tomorrow. Sides include black bean corn salad and red cabbage vinegar slaw. Sloshing Two Hearted Ale. "Blue Monday, how I hate Blue Monday."

    Just a rib observation

    Short ribs have lots.

    Maverick ET-732 vs. ET-73

I like the ET-732. Great range, works great. Two things I wish were different:

The temp alarm setting only increments.
Probes have non-standard connectors (longer). They are this way to fit through the probe moisture seals - not a bad thing in itself. [/list]

    Beef Ribs

I made a huge batch of short ribs recently using a light dusting of the Big Bad Beef Rub. They were great. I bought more. Forum posting.

Ribs turned out great. I used two sauces (thanks Jeff). First time beef ribs for me, so can I expect this pull back everytime?

She Bought Short Ribs - I need a table sauce

I haven't done short ribs yet. Last week She called me when She was at the meat counter. She: "Do you want anything"? Me: "Get some short ribs, but not the riblets they have in the case - get a four bone slab". [She talks to the butcher person] She: "He brought out a four bone rib roast...

    Building your own controller?

Do you need a wireless remote sensor/controller with hi/low temp alarms? The LinkMeter DIY thread is for a controller with remote sensing, alarms and web server access. In my case, by the time I had checked in to that thread I didn't need a remote sensor with alarms because I already had a...

S J. Gold Mini WSM Smoker

Now that's interesting. I have a new style WSM 18 water pan that looks like the Smokey Joe bottom but without the rim indentations and without the vent(s). Also some BGE gasket around here somewhere. Have to give this some thought...
