First Smokes (plural) on New 22.5 WSM This Past Weekend

I enjoy my Auber alot. It makes cooks very easy and hands off. To answer your question it would have most definitely kept your temps up while you slept. The biggest issue I have is the temp getting too high and the fan turns off of course but with the small leaks in the door and such the fire...

My first brisket cook is in the books.

Agree here with Mike. It's kinda hard to overcook a point. It can be done but it's not easy. I would concentrate on the flat first and let the point do it's thing. The last brisket I cooked, the point got up to ~210 before the flat was tender. When I probed the point there was NO resistance. I...

    Set up question (Auber)

I have used the 6.5CFM fan on the WSM with no problems. For cooks 250 and under it should be fine. As for the setup, i usually put a full ring of unlit charcoal in the WSM and light up about 15-20 briqs for a low temp cook. About 25-30 for a high temp cook (275*) I've learned it's best to...

    ATC - Auberins vs IQ110

Mac it holds temps like a dream. The WSM is very stable in temps already but the auber makes me forget I'm smoking sometimes! There is no open lid sensor but the $3 switch or just simply unplugging it before you open the lid will help the controller not overshoot your temps I'm not sure where...

First Smokes (plural) on New 22.5 WSM This Past Weekend

Great looking cooks! I had the same experience when I used my WSMs for the first time. It's almost too easy! Luciano, pork is technically done around 145-160 but with a tough cut of meat like a pork shoulder you have to take it all the way up to around 200 to get all of the fat to render out...

    Mold? Ok to cook with?

I've had some mold on mine before. Just burn it as hot as you can get it which will kill the mold. Then scrape it off and you should be good. Leave the bottom vent open to let air circulate while it's not in use

    Temp control on a 22?

I have cooked numerous times at 250 on my 22. At first they all cook a little hotter but after about 5 cooks it stops cooking so hot. This is for any WSM. In regard to temp controllers, there are a few threads on this but I use Auber controllers. IMO they are a cost effective way to give you...

Need a Replacement Door for a Wood Handled WSM

This looks like a great find! Once you get the parts to get it back to new you will have a vintage wsm. Very neat collectors item.

    ATC - Auberins vs IQ110

I use Auber's regularly in competition. They perform well for me. I probably have 25+ cooks with them. The auber is pretty much plug and play. set your temp and get rolling. Some things I would suggest. Get a silicone gasket. It helps around where the fan contacts the smoker to ensure minimal...

    Brisket Weekend: DECISIONS DECISIONS

Holy Cow all day. I like an S&P rub too but at the end of the day as long as I get a tender juicy brisket I'm happy. Don't think you can go wrong with either.

    First Cook Question

+1 for the pork butt. It was my first cook on most all my WSMs and it's pretty hard to screw up. I waited a good 6 months to try a brisket just to make sure i knew the ins and outs of my smoker. (but I'm also kind of methodical that way :D)

    Gulfport, MS

Welcome to the site. I live on the complete other side of the state (Olive Branch) and have been using WSMs for 2+ years on the KCBS circuit. Love these cookers

Longer cooks... How to reload charcoal

Kris, I don't have trouble getting good burn times with the 18 WSm/Auber setup. We've discussed it on another thread but I will lay out my method here. It may be some small thing you are doing differently. 1. I fill the charcoal ring to the brim with KBB (very important, I'll discuss this...

Recap on Initial Use of Auber Stoker on 18.5" WSM

The clay saucer shouldn't be an issue. I ran my wsm with water twice and have been doing it without water ever since. No issues. I can't think of why you would be having trouble burning coals at 225 for more than 5 hours. I load up my charcoal ring, light up 20-25 briqs, put them on top of the...

    WSM 22 max temp issues

If you want high temps in a wsm the easiest way is not to use water. Water is great for moisture but it's a drag when you are trying to cook above 250-275. Cooked a 24-28 lb turkey for christmas (was fresh harvested so don't know exact weight) on my 22 wsm at 325 without water in the pan...

Recap on Initial Use of Auber Stoker on 18.5" WSM

I do competitions so i end up foiling everything (including chicken). In the first 2 hours of ribs I wouldn't think you would have any issues with the temp seeing as the charcoal has only been lit ~3 hours (not much ash buildup at that point). My point was that if you do need to mess with the...

Recap on Initial Use of Auber Stoker on 18.5" WSM

I've had a 6.5 CFM auber controller for over a year and just got a second 10 cfm controller for my 22 WSM and this is what I've learned. My experience with the auber vs maverick is that they aren't exactly identical in reading air temps. I've used both the alligator clip as well as the straight...

Has Anyone on the Board Competed-with WSM and Won

The more I read and hear about your son the more impressed I've become. Congratulations on raising such a remarkable young man and on showing him a respectable hobby to enjoy in his free time. I hope to meet you on the circuit sometime!

    Aluminum tape

I used some aluminum tape on my wsm at a competition once. It melted right onto the porcelain coating. I had to scrape it off with a razor when i got home. Don't use it unless you like taking 2 hours out of your evenings scraping tape off of your smokers.

    Question for Auber Users

Did my first smoke with my Auber this past weekend. Did a 8lb butt on my 18.5 WSM. Have the 6.5CFM blower. Set it to 250 and had no problems using the minion method. It did drift up to 270 a couple of times but i think that was a user error in lighting too much charcoal in the beginning. I...
