    Don't know the difference...but you can overcome it by putting the smallest butt on the bottom or, if they're the same size, rotate positions half way through the cook Also, if you like more bark and shorter cook times, cut each butt in two and place the smaller halves on the bottom grate

    A top grate works fine in both positions....that way you'll have handles on all grates In the bottom position it'll rest on the 4 lower stap bolts..a couple inches above the water pan...better IMO, more smoke for the meat on the bottom rack

    I always use the performer to light a chimney full.....as soon as the smoke starts I shut the gas off and let the chimney do it's thing....only 1-2 mins max of propane use

    FWIW..there's a place here in town that serves good ribs to the masses....the guy advertises that he preps the ribs, seasons em, and roasts/steams them several hours in covered pans with a little water...then finishes them on a grill with sauce prior to serving ...they're pretty good and taste...
