    Performer on a deck

    All recommendations are not to grill on a wooden deck. Having said that, all my grills are on one. I have had no fire on the deck, although the cover to my WSM blew from the railing onto my Performer while I was lighting the chimney. There was quite a fire, albeit in the grill. YMMV.

    I have a 2002 SS Performer I picked up off of CL. The igniter has not worked since I got it. I ordered the part from Weber and installed it just now. I can light the grill, but it takes multiple pushes on the button . . . a dozen or so. I am thinking that perhaps I need to clean the tube...

    Yes, you can. I am not certain how long it lasts. I have read a month. I made stock at Thanksgiving time. I used the last of it a couple weeks ago. I had no issue with it. This has also prompted me to look for a second freezer as my wife complained as to how much space it took.

    It sometimes takes a few cooks for the WSM to balance itself. It was five or six for me when the interior walls had enough buildup to remain steady. It now dials in at 250 every time. As for the smoke coming out the door and at the lid, that is normal.

    Bone-in rib roast question

    I cook the bones with the roast. I do not serve the bones. To me that is my bonus as the cook. Whether I eat them the day of the cook or the following day does not matter to me. To the cook goes the spoils, as it were. I only do one cook, however, for these two meals.

    Looks good as always, Larry. It's been a long time since I did a squash. Those grill marks are beautiful. I think I am going to finally bite the bullet on them. It looks like you have a high bed of ashed over coals (lower right) and a hot bed (upper right) for the four steaks. Is that correct?

    Sure. http://www.youtube.com/watch?v=Hyp03T6Nmtc I am not as good at controlling temps in a keetle as I am with the WSM, so I may not repeat the rib roast for a while, but there is no reason for anyone who can tame the coals better than I can to do so.

    Tonight's Tri-Tip

    To the victors go the spoils. While the family snoozed this afternoon, I pulled out the leftovers and put together a fine cheesesteak. I had no provolone, so I used the Kraft singles everyone else likes. My tummy thanked me.
