    Ribs, what is best

    I prefer baby backs or loin ribs. the thing I REALLY don't like about St louis ribs is the rib tips that are left on. after you remove the rib tips there really isn't that much good meat on there, dare I say half? when I make baby backs usually 80% or more of the rack is great to eat.

    Never kebab pineapple next to meat

    Skewers? forget that, such a pain. my "kebabs" are not kebabs at all because I hate using the skewer. the food always rotates on it when you try to rotate it which forces you to use 2 skewers. I just cut everything up into the size you would typically put on the skewer and cook them separately.

    BBQ Guru, Pitmaster IQ, Auber instruments among others. I tried the Auber on my 14.5 and was less than impressed, but I have to give it a couple of smokes before I deem it no good.

    Wings on the grill or WSM?

    What temp is the kettle with the vortex? I put the two charcoal baskets in the kettle and cook the wings in a ring around the outside. I then stick a chunk of apple wood on the grate above the charcoal baskets. usually runs 450f or so

    Have an Auber ATC on the way, how did you all mount it to a kettle with one touch?

    I would assume I need to drill a hole in-between the one touch sweepers and the grill grate but I see very little room to be able to do that. how have you mounted it? i'm thinking the ultimate set-up (on the kettle) would be to have a smoke n sear with the auber fan directly below it
