    First Brisket is On!

First Brisket is On! - Finished on Pg. 3 Well, Picked up my first ever brisket yesterday. Did a nice rub from Big Bob Gibson's book and let her rest overnight in the fridge. Here she is, all ready to go this morning: And here is the set up: Oh, and did I mention, this is my first ever...

    Winter storage suggestions?

Ron, I am sort of in the same predicament as you. Live in Ontario, where it can either rain all winter, or snow like a bastard. Either way, we lose! Your suggestions/questions look good to me. I was going to do basically the same thing and then store it in my basement. It's not finished, so...

    Heartburn

I have not had any issues, (** YET **), but I would also look at something in the rub that would potentially be the cause. That is the likely source.

    Coals started with a Chimney

My experience, with a "cheapo" chimney, and using Royal Oak lump, a full chimney takes me about 20-30 minutes. Depends on the conditions, (i.e. wind, temp, etc.). One thing I do, which may not be a good thing, once the bottom coals get going, I will pick up my chimney and give it a bit of a...

Getting Ready for 1st smoke with WSM 18.5 !

Congrats on the WSM! Only thing I would say, and maybe just to save your composite deck, would be to put something under it. If you look here, lots of guys use a large steel cookie sheet, or oil drip tray you can get from automotive store. Better to be safe than sorry. Especially with that...

    At the Lake

Looking good Mike! Gotta love sitting by the lakes in Canada in the summer. Miss going to the old cottage in northern Ontario here. Was always a great time.

    Skin on, or trim?

I have searched here, but have not found exactly what I am looking for as an answer. I picked up two picnic shoulders last night from local meat shop. Great price too!! $ 1.29/lb. One at around 7 lb and one just around the 8 lb mark. Doing a big cook this weekend for a larger group of people...

WSM 18.5 water pan capacity in gallons?

Ah ha.... So it's not a true sphere then. Never really paid attention to that. Thanks Chris! But maybe bring along 6 just in case! Not sure how much, or how long you are cooking!

WSM 18.5 water pan capacity in gallons?

Based, (roughly), on the diameter of the pan and it possibly being a true sphere Volume = (4/3 x PI x radius CUBED)/2 = 7 gal approx. Will be slightly less, as you don't want to fill up the whole pan. So 6 should do it.

    Rib Rub

I will ad my $ 0.02 to this one and say that this was the best rub I have had on anything yet. Thanks for this. I omitted the cayenne, due to the kids, and I didn't have the marjoram or the green pepper corns, but again, turned out just awesome! Made great bark on the ribs and everyone in the...

A whole Butt load of BUTT!!

    Never smoked before......until this weekend!

I would agree with the others. I am still relatively new with my 18.5". Just got my Maverick a couple weeks ago and have used it twice. Great tool. But you can definitely wait to get that. Done ribs a couple of time and chickens without it, and they all turned out great. Just get used to...
