    temp. probe eyelets

I've removed one of my Guru eyelets and it's really no problem to drill them out. (I installed one backwards) There are many ways to add an extra grate without modifing the straps from Weber so I never thought of using anything that was removable. MikeZ

    Using the Silver Bullet Jacket

I crumble up about 5 balls of foil then uncrumble and put them in the brinkman water pan (deeper)in layers. Then I put a foil sheet over the top to catch the drippings. I used my GURU Smoking Jacket for the first time a few weeks ago on a cold, windy & rainy night. It worked perfectly with the...

    pulled pork for 75

Did a similar cook for my mom's 80th birthday. Remember that everyone may not eat pork. I did 4 butts (2) 2 packs from Sam's on my WSM for 75 people and had some left over. Also did boneless skinless breasts on my kettle. Did the butt cook a day ahead of time and put the pork in crock pots...

    Beef Shoulder Clod

A week ago I went to Kreuz Market in Lockhart, TX and had some of the best beef shoulder I've ever had. Is there any way of duplicating this on my WSM? From what I've seen the clod is a huge piece of meat. Is there any other comparable cut? MikeZ

    BRITU Advice

IMHO Try the recipe for "Competition Ribs" here in the forum. It's almost foolproof. http://tvwbb.infopop.cc/eve/forums/a/tpc/f/2880069052/m/3860093152 MikeZ

    Green Lightning Shrimp

Ok....... I tried the recipe as written! Excellent shrimp, great tast. I will definitly make again. A few things I'd change: 1.) DO NOT change the marinade or garlic-celantro butter recipes! 2.) I'd used Kingsford instead of lump. My fire was too hot and not very controlable. On the show...

    Tel-Tru BQ300 Thermometer Installation

I bought the installation kit. It's just a nut and a washer. You can probably find them at your local hardware store. I bought it for the convience. My installation went well except for purchasing a step drill set that didn't go large enough. If I was going to do it again I'd probably get the #4...

    What size Tel-Tru?

I bought the 3" dial with 2-1/2" stem (Tel-tru BQ300). I thought that any longer stem might get in the way of the meat. I also have my ET-73 to measure the grate temperature. MikeZ

    Jumpin' Jim's Chicken Thighs

Ok, I'm missing something. When you put the thighs in the pan with sauce and tent it do you put that pan on the smoker? Won't the heat boil the sauce?
