    Frustrated with CIGs

He'll, brush off the rust, oil the grill. Rust is oxidized metal and will not hurt you. I grew up eating hamburgers, hot dogs and chicken cooked on freshly brushed rusty CI grates.

    Rub and or Sauce choices

Yeah but that's too much work, I just prefer to flavor the bird with smoke.

    OTG Texan Beef Chili

Looks great, time for me to throw some on the stove. Beans on the side for those that want them. Dried ancho's rehydrated add some depth.

    how much wood?

I use pecan splits for heat and smoke. Preheated, I just feed the fire as needed. No problems with over smoking, thin blue to no color smoke out of the chimney. Perfect every time.

    Seasoning

I'd cook a couple of chickens direct, no pan. Lots of grease splattering around and cooking time is just about 1.5 hours. Grease is your friend, learn to love it.

The owner makes the dog. The dog is an extension of the owners personality, there is no such thing as a bad dog, just bad owners. Slash will live forever because you will remember him. My sister's dog, Doobie, still lives because I remember him and he treated me like the alpha male. Damn dog was...

    - Resources for Planning a Texas BBQ Trip

Every little Texas town with a meat market, butcher, will usually have BBQ. They process wild game for hunters and smoke sausage as a byproduct of their work. The fun is discovering them as you travel across Texas.

Welcome Sam! Plenty of meat to cook outside of pork, try a sirloin tip or perhaps some lamb. It's all good
