    Bacon made easy

Great thread guys and ladies! Learned a lot by reading through. My question is, we have a couple of people in the household who can not eat the nitrates that are present in the Morton's cure. Is there another way to naturally cure this without the nitrates? Maybe I missed something along the...

First smoke on my new WSM 18.5... Boston Butt

Good looking smoke! And don't worry about the onion, it will add a bit to the flavour. It shouldn't hurt it at all.

    Too much smoke?

Yep, what Tony said. Happens to me too. Sometimes just a nice "heat haze" coming out the top vent.

    K.I.S.B. = BRATS or Brian

    Pork Butt in the Rain!!

Chad - Yep! Gonna look into something along those lines when we put in the new deck next year. One on the house now is the crappy "builders" deck. It's only 10' x 12'.

    Pork Butt in the Rain!!

OK, late reply and plated pic, but here it is: Was very good. Excellent smoke flavour. Though I will say, this butt was a lot fattier than the last 2 I have done. Was a bit on the "too much fat" side even for me. My other half was not happy with it at all. I tried a butt from a different...

    Pork Butt in the Rain!!

5 hours in and just checked the bark. Not quite there yet. Gonna give it another 30 minutes then wrap it up: Sitting at 163 F internal and grate has been steady at 245-250 for the last 2 hours. Rain has stopped - for now anyway......

Not a grill in sight for this "cook".

Nicely done David. Have to make some myself one of these days.

CEO's, can't live with them, can't live without them

That is some fine looking eats there Bill.

    Pork Butt in the Rain!!

Bill - Ya, that's what I figured. WSM is under the deck, so just getting a few drops on it from run off. Not getting the direct down pour. So it's doing OK, so far. Just happy I had a window of no rain while I was getting everything up and running. Starting this thing in a down pour would not...

    Pork Butt in the Rain!!

So, today we are having friends and their kids over for PP and fixings! But, today, not the best day for smoking: At least until around 4 PM EST today, nothing but rain........ Oh well, first time for everything!! Here is today's slab o' pork! And today's setup is with pecan and apple...

    Them ribs look goooooood!

    Heavy smoke at the beginning

Ditto to what Timothy just said! Only thing I would also worry about, is keep a damned good eye on your smoker in the common area. May decide to grow some legs...........

    Spares • ChuckEyes • Sausage • Shé~cone

You always impress Jim! Great looking cooks!

    Dent

OK, I am not saying to "take advantage" of Weber here. All I am saying is, even if it is a display unit, it is still purchased from a dealer and should still be covered some how. I also agree that a dent won't hurt the cooker at all.

    Dent

Even if it is a display model, I would contact Weber and see what they will do for you on a replacement piece. Still new and under warranty IMO. Just don't mention it was a display model and you should be able to get it no problems.
