    Welcome. I wouldn't recommend spending money on a thermometer that you install on the Weber. The temperature will be different in the dome vs. on the grill grate. I would recommend a wireless thermometer that can measure both grill and meat temp (I like the Maverick brand of thermometers)...

    What about using a stainless steel washer that covers up the size of the hole along with a bolt and lock nut.

    I had both but eventually got rid of the 18 because it really wasn't necessary since I had the 22. The 22 can do everything and more than the 18. I would go with the bigger size.

    Both grills will cook the same. It just depends on what you want and will use. If you need/want the side table, then buy the performer. If there are other accessories you would rather have, then buy the Mastertouch. A third option would be to look at buying the 26.75" grill as well.
