    Cleaning and the Funk

I went to the Citadel (my dad went to West Point), so I am quite familiar with walking tours! I have to work a bit this AM, then coming home to smoke that pork. Take it easy, guys and I'll let you know how the new sauce comes out. JKC

    Cleaning and the Funk

Thanks, my friend. Again, I truly apologize to you and all members for my behavior. Gosh, I am ashamed. Kidding. I am going to let this "cook" hot and dry all night long. That should kill whatever is there and smoke out the remainders. Tomorrow, I will be starting up a Pork Shoulder...

    Cleaning and the Funk

Thanks Glenn. I apologize to you and all other members. So, you think I need to scrub the insides with detergent? It is not burning a dry burn at full temp with no water pan. (Cleaned that already). Will that do or not? Again, I am sorry for my infraction. I am humbled and truly...

    Cleaning and the Funk

I did it. I left the partially full water pan in my WSM to enjoy about 2 weeks of this wonderful (mold inducing) Georgia heat. There is no visible growth, but a funk that reminds me of toe jam. (Please don't ask how I know what that smells like). Not concerned about the water pan, but can...

    The New 18.5

Real Quick... Does the new 18.5 have a temp guage? My Father-in-Law is a convert and wants a smoker for Father's Day, but I'd like to get him the 18.5. Thanks in advance, JKC

    Reserving Pulled Pork

My family is spending the week in Destin, leaving tomorrow. The condo has a kitchen and I am smoking a butt today. Plan on pulling it tonight and taking it down there to have sandwiches for one meal, tacos for another, and generally snack on during the week. Yummy! Questions... Store in...

    Smoke ring on Pork butt?

Paul, Can you expand on that? I always rub the pork at least 12 hours before and put it back in the 'fridge... Then, take it out of the 'fridge while I am setting up the smoker and lighting the chimney so it starts warming up, then put them on. Not really room temp. when they go on, but...

    Those Iron Thingys

OK, Burning up the board today. Sorry. My dad has a 22.5 kettle that has been only moderately neglected and I am restoring. Grate is gone. Warped and never cleaned... Corroded with thinning grates. My good friend, Glenn (in Mississippi), tells me the top grates of the 22.5 WSM (which...

    wood handles

I've got a 22.5 kettle (actually, Dad's) with wood handles. Very weathered and neglected. Mold in the grain. Any advise on bringing them back up to speed without over-drying the wood and splitting it? I am thinking bleach, with scub, then lemon oil? JKC

    New Kingsford for 2010

I have been using the hickory and mesquite impregnated K briquettes. Aren't they using the new formula. I didn't pay too much attention, but seems when I picked up my last bag, it was the lighter weight, with claims of more efficiency. JKC

Ribs... Pulling my Hair Out... Help!

Christopher G., I am completely taking your comment the wrong way and heading up to CT beat your face in! Kidding, of course. I will try your method and see what shakes. I am not a competition guy by any means, but I know my way around a Kettle and these things have me stumped on the...

    Smoke ring on Pork butt?

Glenn, I am in Atlanta, you are in Mississippi... So, at least a State and a half away... I'll be there in an hour! You sound like me cooking all time. Just relaxing and fun. Thanks for the feedback this AM on the grates. I'll see if I can get you guys PICs of the Pulled Pork. JKC

    Smoke ring on Pork butt?

Glenn, Can I come over and eat your BBQ? Hate to invite myself, but For The Love of Pete! Chris, No pics, but mine look similar. I get a pretty deep smoke ring. My ribs, on the other hand, are currently sucking wind. See my post on pulling hair out. I may do one tomorrow and if so...

Ribs... Pulling my Hair Out... Help!

Bud Light or Natty Ice. Thanks for all the comments. We have two butchers near me that have great quality beef. Use them for Rib Eyes and Filets and Porterhouses. I bought my ribs at at Kroger... Prepacked, previously frozen. (I know guys, cringe)! But seriously, I used to cook these...

Ribs... Pulling my Hair Out... Help!

No luck on doing ribs on my WSM. Read the 3-2-1 method and I do not like them falling off bone either, so I did 6 hours straight without taking off and foiling. I figured they would be drier and a little more firm. Wrong. Fell literally apart trying to get them off and extremely greasy...

    SS Cooking grate ?

Related and Similar Question. I've got a Weber 22.5 Kettle at my dad's house. Will the 22.5 WSM grate fit? These are much thicker and more sturdy than the ones that come with the Kettle. I'd like to order as a replacement. I'd test myself but I am 100 miles away. Thanks in advance. JKC
