    I'll be smoking a farm raised salmon on Sunday. Wife thought it was wild and grabbed it at Costco. These one's were frozen but wild and it was easy plus was a healthy and tasted pretty good.

    Looks great but for it being rubbery it may have been to long in the marinade. Overnight is along time and if it has acidity in it then it can actually start breaking down the proteins in the muscle.     Cold won't bother you what will get you is wind. If possible make a wind break, in my experience (there are far more experienced people then me on here) wind eats up your fuel.
