    For me there is no end of grilling season! But I have a soaking tub similar to @Joe F, I cut the bottom off a 55 gallon poly drum and toss all the grates in with some water and OXY Clean powder or now OXO Brite from Costco.

    So sorry, I just noticed your reply Robert. The discs I have for the Stackers are 17 3/4" dia. but I had used 18" aluminum pizza pans before them. I've been using the Hunsakers Smokers Vortex basket in the Cajun Bandit Conversion for some direct rotisserie cooks.

    Home Depot had some 3/4" aluminum square tube when I was getting the aluminum angle for my build. But I was able to use some scrap tube from a Weber gas grill frame and the angle fit perfect in the Ranch frame. 8-12" should be sufficient to stand up to any weight we'll be putting on the frames...

    I've cooked on a friends Southern Yankee which looks somewhat similar to the Cadillac. His is the rotisserie model with the rear firebox. Dual chamber, it is a sweet unit! 250* was its sweet spot, got up to temp fast for a big cooker and just cruised along all day long with no hassle.
