    Fan for BGE?

    Not to de-rail the conversation...But do you need a fan for the BGE? I'm a Primo user with little experience with the BGE. The Primo will run 15hrs no problem without any temp change. I figured the BGE can do the same.

    lose the pan and crank that thing up. Spatchcock is better done at hi temps. 350-400.

    I wouldn't worry about it, its your first one. Just cook it and have fun. Do your flat and wrap it little early. Then make some good O'l tasty devil candy out of the point.

    was it rotten? If wood starts to break down,rot, or been sitting on the ground for years. It can give off a nasty taste/smell.

    What also helps with crispy skin is, dry the bird off as much as you can and let the skin dry out a little. I like to rub it down and let it sit on the counter for about two hrs.

    lodge works great. cruise craigslist or flee markets and you can find the old school good stuff. My old lady does work when it comes to making bread in a dutch. The combo is a great set to start with. down the road, I would suggest getting a few true dutch with legs and handle.

    That's actually pretty cool for a all wood outdoor smoker. Is it effective? who knows. I'm sure you could have tons of fun with it and make it a nice little novelty item.
