    Tony's Carne Asada

I love Mexican food and yours looks very good, I also cut the meat about 2" wide with the grain and then cut on a diagonal across the grain about 1/8" thick, then marinate, the meat will almost dissolve in your mouth it's that tender. Enjoy, Karl

    Maui Steaks (my own recipe)

Steaks look and sound excellent, I have to agree with George on the pineapple, it is rarely ever used here in cooking, however after saying that, I'm a transplanted Californian and I would definitely add some pineapple juice to the mix! Karl

Best vessel for beans instead of foil pans

How about a round cake baking pan, the kind bakers use for large tiered wedding cakes and for the smoke problem, don't forget the old Boy Scout trick of rubbing bar soap on the outside of the pan to facilitate cleanup. Karl

    looftlighter

When I bought my WSM Ace Hardware didn't have any charcoal starters, so I improvised with a # 10 can, Not long after I did away with the grate, But now I just place the fire starter block directly on the lump, build a small "tepee" of scrape hardwood, then when the tepee is burning good I...

    Lynched Chicken on the WSM

Ya know guys, I had to come back from work to say this, ...I was thinking about how we can be so easily influenced by what we see here, myself included with the idea of suspending a chicken, however, this is not the best way to do this, I'm afraid I'm the bad influence here and not Jim, the...

    Lynched Chicken on the WSM

Thanks all for the compliments, Wolgast, it doesn't take nerve, just a steady hand and a center punch and a hammer, after that the hard part is over, besides, it's challenging to fabricate something like this. However, it's a two person operation to load and unload the bird, I built the...

    Lynched Chicken on the WSM

After drooling over Jim Lampe's high hung chicken thread I knew that would be tonight's dinner, I drilled a hole in the lid and used a stainless eye bolt I had left over from the Santa Maria build to suspend the bird over the enfer, I also cut a rotisserie bar I had hangin' round to length and...

    Hang 'Em High

Chicken looks awesome, and thanks, you have given me an idea, I've hung meat in the GOSM, but for the WSM I'm going to drill a hole in the lid and insert a stainless eye bolt, I think it will accomplish the same thing. Karl

    Meat Grinder

Hi, I have a Kenwood meat grinder, made in England, maybe you can find one in the States, the reason I said that is when I first started grinding meat and making sausages I bought a cheapo grinder and it quickly burned out. The reason being, after I had bought it, I learned to grind meat...

Thanks all for responding, it seems Bob Correll's link give me the answer, the French beef cut for flap steak is called bavette d'aloyau and that's what I have pictured, ...we have tons of it here and we grill it all of the time, several times now in Tony R's Carna Asada marinade, very good...
