What is everyone cooking this weekend?

Should be smoking 8 lbs. of beef short ribs on Sunday. Checked out an Asian supermarket which was recommended for good prices on fresh meat. Short ribs were 2$/lbs., but I think they have less meat than usual (first time I’m doing beef ribs, actually). Also got a picnic that I’ll marinade and...

    Inaugural Cook

Thanks for the feedback! It’s a fun learning experience. Grate size is part of the reason for taking these pics. Hoping that people who are thinking about getting a 14.5" won’t be discouraged. YMMV but, FWIW, it does fit enough food for my needs and, as a compulsive pedestrian, I love the small...

Documenting my First Cook (1 of 2)

    Low Temp and Food Amount?

Should do my second cook, this weekend. We’ll see if I get similar results. Guess my concern is unwarranted. It’s not because I maintained a low temperature with some water that it risks burning even lower in other conditions. Could try with an empty pan, next time I do poultry. Just thought...

Free sugar maple in the Ottawa area

Did you keep some of that wood? Was just thinking about locating a source of free wood around here. Worst part is, I don’t drive…

    Low Temp and Food Amount?

Did a first cook in my shiny (!) new WSM 14.5, yesterday. About 3 lbs. chicken thighs and about 2 lbs. drumsticks. Only a quart of 208ºF water in the pan. Used the Minion method with the charcoal bowl half-full of Kingsford briquettes and a half-chimney of Basques lump. The smoker remained...

Howdy, Got my 14.5" Bullet, a couple of days ago, as a birthday gift from my amazing partner (she knows me well), and as an upgrade from a Cheapo Offset Smoker. What a difference it makes! I’m a French-speaking ethnographer from Montreal, now residing in Hull, Qc. Hull is part of Gatineau...
