SMOKEY JOE PLATINUM AIR FLOW PROBLEM

Just did the mod to the smokey joe platinum. Couple of obsevations. I used the smokey joe silver bottom vent and hardware and the smokey joe silver ash catcher. I used the unibit #4. Drilled four holes at 3/4" each, and one hole in the center for the screw about 1/4". Before drilling from...

    Temperature on Smokey Joe Platinum

Paul, I ordered the parts for the SJP lower vent mod. If you close the bottom vent while you transport the grill, what are the disadvantages? It seems to me that there are only plus sides to this mod. True or not?

    Temperature on Smokey Joe Platinum

Paul, Since you have both the SJ and SJG, what differences do you notice about temp, temp increase, and fuel consumption?

    Temperature on Smokey Joe Platinum

Greg, I did put the lid on and watch the lid therm to see how high the temp was going. At about 400 I took the lid off and threw the steaks on. I then put the lid back on and saw the temp drop to 250-200. The steaks were in the fridge. The temp did climb back up to 350. I then took the lid...

    Temperature on Smokey Joe Platinum

I fired up the SJP for the first time yesterday to grill some rib eye steaks. I used about 1/2 to 3/4 chimney of fully lit Kingsford and a couple handle fulls of unlit lump. All the coals were moved to one side. The temp went up to 410 with no problems, before putting the steaks on. I didn't...

Clay pot base in place of water pan?

I have no reason to doubt you guys, but I will experiment with this issue this summmer. What I can tell you, however, that my last several cooks in very cold weather with water has required much more than one bag of Kinsgford, all things remaining equal such as wind. If I had to make a...

Clay pot base in place of water pan?

Dino, With the cold ambient temps here in New England for the winter, fall and now srping months, the clay pot mod. is better than water. As you know, water keeps the temps low and most of the time you are opening vents to keep your target temp from decreasing. Conversely, the clay pot keeps...

Clay pot base in place of water pan?

I'm two hours into my cook with the foiled clay pot mod. This is a great mod.. I'm cooking ribs and pork loin filets. The ambient temp is 35 degrees, it's windy, with some snow flurries. I have a double charcoal grate and the charcoal ring is half full. As Dino indicates, you have to control...

Country Time Lemonade Powder in a Rub

Country time lemonade powder seemed like a unique ingredient to add in a rub recipe. Personally, I would substitute something more natural like zest. But of course I never tried it and was wondering if someone did. So, if anyone has ever tried it in a rub, I would love to know their thoughts. Mike.

Country Time Lemonade Powder in a Rub

I was perusing some bbq books yesterday at the local bookstore, Paul Kirk's Championship BBQ and Ray Lamp's championship bbq both of which are excellent. I can't recall which of the two, but one of them uses country time leomonade powder in one of their rub mixtures. It sounds like a clever...

    Roadside Chicken

Good idea Kevin, lime juice with a little lime zest. I have never used lime zest before usually just lemon zest, which has a bright flavor, but I assume the lme zest will be equally bright.

    Roadside Chicken

The roadside chicken recipe is a keeper. Thanks for the recipe. I put some thighs and legs on the gasser, came out excellent. I had them marinating from last night. I placed chicken over a layer of foil to let it cook for a while before removing foil and cooking direclty over flame. You must...
