    Yes, it would be easier to put the vent on first and then drill the holes, but, initially, I didn't want to take the stop tabs off to do that. However, I ended up taking them off later to get a better fit.

    If you're doing minion, with warm tap water in pan, 4 butts at room temperature, and vents open at 100 per cent, probably 1 hour, but more than one hour if above variables change.

    Brad, The therms you listed go up to 220 degees F. I would suggest that the therm be able to measure higher temps at least to 500 degreees for the times that you want to do higher temp cooks such as turkey.
