    That is a glass Worcestershire sauce bottle. I save empty ones to use. I put the basting sauce in it. I then can just shake the sauce onto the chicken.

    We absolutely love this recipe. I play around with it. Marinating for 24 hours gets the flavor in deep. Our vacations began today. I shoveled out the Performer and made a batch for lunch. I also grilled some asparagus and topped it with Hollandaise. Yummy.

    Another thing to consider is that new cookers can run hot. I know my WSM took about five cooks before it would dial in at 225. Prior to that I ran hot. Having said that, seven hours seems plenty long. Is it possible the slab began too fatty?

    It is not rain resistant. I still need to purchase an umbrella that will mount to the railing. Every time it rains, I remind myself I need to do that. My shopping list is long. The blanket worked well last year. I used a couple clamps to hold it in the back. All vents are open.

    I use a welder's blanket. Admittedly, the bayshore of New Jersey is not the mountains of Denver. Worked plenty well for me. The preformed jackets look nice, but are too costly for me.

    Standing Rib Roast Debriefing

    Errr . . . yeah, 125. Fat fingers here. The pudding could have gone a touch longer. I was rushing getting everything done at the same time and was worried with overcooking them. Even so, I was very pleased with them.
