::Official:: 4th of July Smoke Thread!!!

We had a hodge podge of things today. I've been hankering for ribs as it seems to have been a while since we had any. I mixed up some rub, cut a couple racks down, rubbed and put on the WSM a little before 9:00 this morning. Diced up some of the trimmings and added to the beans I prepared. I...

    A Summer Ribeye

Went to the butcher shop yesterday and picked up some meats. Was going to dine on pork chops, but my wife bailed on that. That switched things in my mind and I grilled the ribeye instead. I used just EVOO and some Montreal seasoning. I added a hunk of mesquite to the kettle. It was a...

    Top Chef 26'er

I noted the lighter fluid someone used. My wife said she saw a chimney, but I missed it. The Weber segment was very short in the episode.

How to maintain a paella pan?

Sarah Jay of paellapans.com told me that to get the handles inside a 22.5" kettle, one needs to go to a 17" pan. She pointed me to this page that has all the dimensions including the handles. http://www.paellapans.com/Pael.../152.htm#detailtable

    Well Done Steaks

Thanks for all the suggestions and comments. My FIL is 75 and an ex-Marine. There will be no changing his steak choice. We once left a wonderful restaurant in Portland, ME for his daughter's law school graduation because there was no beef on the menu. This was a lovely restaurant that she...

    Well Done Steaks

I love my wife and her family. The only flaw I have found is that they all like their beef cooked well done. We are hosting a get-together. We're planning on having T-bones. How does one go about properly cooking to well-done? I suspect my usual 1 to 1.5" cuts are going to be left behind in...

Pecan-Crusted Pork Tenderloin Pinwheels with Carolina Mustard Sauce

That looks really good! Did you roll the bacon on the inside or outside of the pork? Thanks for sharing.

How to maintain a paella pan?

I am looking at paella pans right now. This thread has been helpful. Is there any reason to stay away from stainless if the intention is to use it on the kettle? Just checking before we pull the trigger.

    "Grateful Dead" Pulled Pork

Great thread. Unfortunately for me, there Ain't No Bread in the Breadbox. But there Comes a Time when there's Help on the Way. When Push Comes to Shove just add a little Rosemary. FWIW, the butt looks good.

    NY Strips and Cobb Salad.

Very nice, Don. I would gladly eat a strip steak about now. Thanks for sharing.

    Battery Pack

Someone mentioned some time ago that a standard battery pack is not the right voltage for the Weber rotisserie. Knowing nothing about these things, I am looking for a pack that I can plug the rotisserie into. Right now I have to drag a long cord from one side of the house to the other across...

    Found Pork Picnic in Freezer

Hey, I can do that. What is Pernil traditionally served with?

    Found Pork Picnic in Freezer

What is your preparation for Pernil? Do you slice it rather than pull? Someone (perhaps you, Larry) suggested I do Pernil on the rotisserie.

Opinions Wanted: Arthur Bryant's and Gates BBQ

I liked AB's above Gates, but it wasn't like there was anything wrong with either. The atmosphere at AB's was more to my liking. Order what you like; it's all good. When I visited, those were the places I was taken to. I wished I had tried more. There's also a place called Fritz's...

    Run for the Roses Tri-Tip

The original plan was to have pulled beef for the Run for the Roses, but laziness settled in and the chuck didn't go on until the afternoon. Not to be plateless, I tossed on a tri-tip, a sweet potato, and some carrots. Yummy. And nothing says Kentucky Derby like mint juleps. The Maker's Mark...

    Probes thru eyelets

You don't need to drill. The eyelets fit in the bracket holder of the WSM. See the diagram here.

    Question

What temp do you want to reach? Where is the WSM getting to? I don't think chips instead of chunks will make a difference. One way of increasing temps is to prop the door open or place the lid on slightly askew. Where in South Jersey are you? HD and Lowe's carry chunks.

First Beer Can Chicken on WSM - Meh

When I was first introduced to beer can chicken several years ago, I was thoroughly impressed. I made it regularly. I have a little stand. It was a staple on the old CharBroil. Once I got into smoking, I looked forward to smoking beer can chickens. My first attempt was too heavy on the...

    brisket size

You cook whatever size meat suits your fancy. Some approach it that if you are going to fire up the smoker, you might as well fill it up. A FoodSaver is a wonderful device that helps with all that leftover meat. Also, the more you cook, the more familiar you will become with the neighbors...

    Bone-In Rib-Eye Steaks with Sweet, Pan-Roasted Garlic

That is a nice meal, isn't it? I decided I needed to triple the garlic next time as I could eat them all day long. So simple, yet so delicious. Those ribeyes were gorgeous. Thanks for sharing.
