    WSM Outside?

    I am in NJ and leave all my grills outside all year. If not, how would I use them? :) When it rains heavily I drain the bowls as others have mentioned, the covers are not waterproof.

    Charcoal only griller

    A few years ago my POC gasser was failing. I went to HD to buy replacement parts. As I added up the expense of what was in the cart, I realized I could purchase a charcoal grill. I trashed the gasser and am now up to three charcoal grills not counting the smoker.

    Lid on, although I suppose there is nothing keeping one from leaving the lid off. I keep thinking of doing tri-tip that way.

    any tricks to greatly speed up a chimney starter?

    Lighter fluid. It'll torch that chimney in no time. Yeah, okay. I just put the chimney on the Performer and turn on the gas for a couple minutes. It seems to speed things up for me. It'll still take a few minutes.

    Kettle pizza oven

    Purchase some semolina (or cornmeal). Sprinkle some onto the peel. Lay the dough on the peel, then assemble the 'za. When you are ready to transfer from the peel to the stone, shake the peel. If you haven't put too much onto the dough, the 'za will slide off easily.
