    Christmas Bacon

Hope everyone had a very Merry Christmas. I haven't had much time to BBQ the past few weeks, but I was able to get in my first bacon cook a couple of weeks ago using the Bob Correll method. Finally getting a chance to post some pictures. Here's the lowdown: The whole belly (11 lbs.), skin...

    Competition Thighs Part 1

I think you're off to a good start. I'd focus on getting the pieces a little more uniform in size and make sure the turn-in pieces are evenly sauced. You have areas that are more heavily sauced than others. The judges like consistency and pretty-looking entries. I compete with a team in the...

Can't find tender quick and I don't have pink salt...

Also, try your local butcher shop. They might not have MTQ but they might have their own curing mix which is pretty much the same thing (salt/sugar/nitrate/nitrite).

    Throwdown #9: Pork Loin

"In the event of a tie, the prize shall be awarded to the 2nd person with the third-least amount of votes." That's directly from the rulebook. Seriously. Look it up. Chris, just send me a direct message for my address. :)

Some say I'm certifiable, but this says I'm certified

Welcome to the club, Jim. The main reason I became a certified judge was to get insight on how the food is judged so our team could hopefully do better in competitions. It has definitely improved our turn-ins and scores. But I'm also looking forward to judging some competitions to see other's...

    Canadian Bacon

Ditto. That looks very good, John. I'm picking up an 11-lb. pork belly today for my first try at bacon. After seeing this I think I'll do half of it peppered.
