    Thank you for the positive comments. The first time I did butts for a party, I did "Mr Brown" and had many, many (many) complaints about "the spice" over the next few days. (they all loved it at the time, though)

    I thought the clay saucers were kind of flat, that is why I assumed the fat would "roll" off of it. Cheap foil pan as a drip tray sounds like a good idea.

    When you use the clay pot (instead of water in the pan)and you cook something fatty, like 2 butts, what happens to all the grease/fat ? I would imagine it slides off the foiled saucer into the fire, correct ?

    Can pieces of lump be too big ?

    Finally got a hold of some Wicked Good Weekend Warrior, and there were about 10 pieces that were HUGE ! Like, bigger then a grapefruit big. Would you break these in 2, or leave whole ? (for both grilling and smoking)

    how do you start your charcoal/lump?

    How much of an advantage is the MAPP torch over a regular torch. What would you say is the time difference the MAPP makes in lighting a bunch of lump ? I got the regular torch, and am slightly disappointed in how long it takes....

    Pork Butt in New Jersey

    I live in central NJ, and usually get mine at Costco. Though I also get then in ShopRite, Acme, and Pathmark. Should be 1 or more of those in the area. In my area, it is more common to find the picnic cuts in the supermarkets.
