When using a clay pot...?


 
When you use the clay pot (instead of water in the pan)and you cook something fatty, like 2 butts, what happens to all the grease/fat ?

I would imagine it slides off the foiled saucer into the fire, correct ?
 
No, it drops into the clay saucer. The clay saucer lays on top of the empty water pan. What you can do, is foil the saucer for easier cleanup or place a cheap foil pan on the bottom rack to catch the drippings.

I thought the clay saucers were kind of flat, that is why I assumed the fat would "roll" off of it.
Cheap foil pan as a drip tray sounds like a good idea.
 
I use a 12" saucer that fits inside the pan, then foil over top the whole thing leaving slack in it so that it forms a bowl. By the next day most of the fat is solidified so all you have to do it roll it up and throw it away.
