    22.5" Kettle Wing Capacity?

I've got about 35 on there in this pic. 60 will probably be tough, depending on how much room your wok takes up. You may have to rotate the ones that are closest to the middle.

    Carnitas - Thanks to Tonybel

Those look great! I'm gonna have to try this.

Okay I'm sold! Going to make a 26" Performer

No problem, just looking forward to seeing the finished product. Also, just noticed in my email (I am getting reply notifications) that you had some links in your original response, and that you're using photobucket. When you have a picture open on the photobucket webpage, click on the IMG...

Best place to buy BBQ Guru

I've noticed the same as Randall, prices on Amazon and eBay seem to be higher than directly from their website.

    Today at Costco

My Costco bumped the price for prime packers from 2.99 to 3.49 (as of the weekend before the 4th). I think the pork belly was still 2.69.

    Foiled brisket saves the day

Yep, this ^^^.. Peter, you stumbled across it, but now you know you have two options. I just did two overnight briskets for a party today at my parents house. One was probe tender when I pulled it at 11:30, while the other wasn't quite probe tender when I pulled it at 12:30 (needed to leave...

    cast iron issue

Assuming you're up for re-seasoning if you clean it up, maybe try the oven cleaning technique to strip everything off and see if that works.

    Question For Rotisserie Users

My ring is not a tight fit, and there's plenty of smoke from the ring/kettle area, but my notches line up fine regardless of which direction I orient the motor bracket. My guess would be that you have one that's slightly out of tolerance. The good thing is that it's a Weber, and their customer...

    Question For Rotisserie Users

I can take some pictures of mine if you'd like to see some for comparison?

    Brisket and Wings

Thanks for the compliments everyone. I really enjoyed it, as did most of the adults. I'll definitely be using it again. This rub combined with the Franks and butter sauce was excellent. I can't remember where but I read about someone else applying salt first overnight with a salt and pepper...

    Brisket and Wings

The finished product. I didn't think to put up a baracade so I could get some pics. Wife grabbed these two. They were grabbing it as fast as I could cut it. Cook went a little longer than expected so everyone was ready to eat. :D Probably my best one yet. I had been doing high heat for years...

    Brisket and Wings

My dad asked for brisket for fathers day. Costco Prime Grade Brisket. Salted for about 8 hours then added pepper right before putting it on On the WSM with the DigiQ so I could get some sleep. Pecan and oak for the smoke wood. Close to 8 hours in, time to wrap. For some reason I waited...

    Kid In A Candy Store

I just did the same thing a few weeks ago, and at the same location. :) Very happy to see both prime grade brisket and pork belly (gotta make some bacon soon). Went straight to the desk to join after seeing the selection.

Tailgate Ideas - What say ye?

I've done fatties for tailgates a few times, they were a big hit. Here's a great thread with some different varieties. Your 2.5 hour time frame may be pushing it though, unless you run it on the hotter side.

Anyone else use Lighter Fluid with their gas ignition Performer?

I just got done cleaning out my gas ignition. Mine stopped working all together. Looks more like the flame in the video now. And I also use it with a Weber chimney. Works great as long as that gas piping is clean/clear.

Target Weber Clearance has started (YMMV)

They're disappearing fast here. Hope your "stashed" one is safe and sound. The closest one to me disappeared yesterday (Springhurst) with the inventory checker showing a $41.98 price still. So I had to pull the trigger today. Grabbed the last one in Middletown. Good luck! :D

Target Weber Clearance has started (YMMV)

Were you at the Outer Loop store? I was there on Tuesday. Links above were showing $29.98 but it was scanning full price. I guess if they're down to 1 then they are ringing up $29.98 now. I don't live that close to this store so I won't go searching for your stash. ;)

My First Brisket Cook-Flat Texas Style With Butcher Paper

Looks great! I've been doing only high heat briskets for the longest time, but have been getting the urge to try slow and low again. My HH briskets never look that good.

Thinking About Buying BBQ Guru DIGIQ DX2 What's Everyone Think

I picked up a DX2 a couple months ago for overnight cooks. I had stopped doing them because of how tired I was the next day (got up every few hours to check temp). I'd only been doing HH brisket for quite a while. I've done a few overnight pork butts with it and it works great.
