    Cheesy Western

Haha! Thanks everyone. Been a while since I was at "The T"...totally forgot about the relish. Also, forgot about the one in Lynchburg. Use to eat there when visiting a friend who went to Lynchburg College.

Prepping for 1st cook - have a few questions

I'd fill the charcoal ring with more than a single layer of unlit...I usually fill it all the way up no matter what I'm cooking, but you don't have to for a short cook like this. It's better to have more than you will need at startup than to have to refill mid-cook. It's been a long time since...

    First Smoke Question

Yup. Close all vents (top and bottom) and the charcoal should go out after a while. If your smoker is pretty air tight it will cool down rather quickly and be completely out in no time. You can reuse the leftover charcoal on the next cook.

    Cheesy Western

We had some frozen hamburger patties from Omaha Steaks from Christmas that we decided to cook tonight. Thinking of a way to make them "interesting", I decided to make a "Cheesy Western". Anyone from Southwest Virginia probably is familiar with the Texas Tavern, a delicious hole in the wall in...

    Beef Stir Fry

Another one from Pioneer Woman. Ready for the wok. Snow peas first. Then the beef and green onions (cooked in batches). Then everything back in with the "juice" to warm. Plated with some jasmine rice. Unbelievably good. We love PW. Never had anything from her that was...

    Accessories

Shop rags. You can get a pack of 24 for about $10 ( I think) at Lowes. To me they are invaluable. I always have one draped over my shoulder when cooking. Saves a ton of money in the long run over paper towels. I keep a laundry bag next to my grilling stuff for the dirty ones. When it's full, in...

    Roasted garlic mashed potatoes

Not sure. I've never made mashed potatoes for a special meal ahead of time and then reheated them in the microwave for service. I've had them the next day as leftovers like that though (usually to feed a hangover )...and they were good but not as good as the "fresh" ones the night before. I...

    Dad does Chuck Eyes

Sweet cook! Sweet gift! I love my Et-732. A tip...if you're monitoring cooker temps and cook time, but not internal meat temps (ie: for ribs), plug the smoker probe in the meat input. Now when you put it in "timer mode" you can see both (in "timer mode" the cooker temp isn't shown). BTW, I...

    Roasted garlic mashed potatoes

Are you asking about timing them so they are done at the same time? If so, you're going to want to let that roast rest for quite a while before carving...right around a half an hour I think. That's just the "cooking time" for Alton Brown's Garlic Mashed Potatoes recipe. I'd suspect it's probably...
