    Walnut update

Mesquite is a strong wood - a little goes a long way. I use a little on fowl. I have used black walnut and found it relatively mild. I highly recommend cherry for fish. I've done tests using various smoking woods and found cherry goes very well with salmon and tilapia. I use apple, hickory...

    Crossroads

It really depends on how many you want to smoke for. I have a mini and an 18 and find I use the mini more often because it's plenty big for two. I can fit a lot in my 18 and seldom think I need more. But given a 22 and 18, I might be inclined to keep the 22 for big cooks and use the mini when...

Another Valentine's Day surf and turf

Thanks, all, for the kind words. We did enjoy it and there was enough steak left over for a sandwich for lunch.

    Chimney starter.....

Add my vote for the side burner on my gasser. I've never timed it but it seems to only take a minute or two to get the first coals lit. As soon as I turn the gas off, I move the chimney starter to the charcoal grill to minimize ash on the burner. Yesterday I had a fire going in one of those...

Another Valentine's Day surf and turf

Like just about every one else I wanted to make something nice for dinner so I fired up my Platinum, got the cast iron grate hot and grilled egg plant, asparagus, shrimp and a couple New York strips. It was nothing particularly fancy but it is amazing what you can do with some charcoal.

Burners Going Out On a 2011 Summit S-670

I'm not that familiar with the burner layout on the Summits and I wonder if it is possible for stuff to drip on them during a cook. In my grills, the burners are pretty well protected by the flavorizers so they don't get much in the way of drippings on them. Were that not the case, I would...

    bigger is better.... :-)

I wonder if that's the one I passed up (Glendale Heights, IIRC.) If so, I'm glad I did. It's clear that it has found a better home than I could have provided. Well done!

    Ignitor issue

I agree with George. I would take a brass grill brush and lightly brush all of the burner holes to remove the stuff that deposits there during use. If the stuff blocking the holes is too tough to remove with the bras brush, poke with something metal like a safety pin and work carefully not to...

Rework Silver B or upgrade to new EP-330

Tough call. Either way you wind up with a great grill. Just about the only thing I use my side burner for is lighting a charcoal charcoal chimney. You cover that with your Performer. Does the newer grill have a liner in the hood? That provides a performance benefit. And the north/south burner...

Q300 cover that you do not have to fold tables?

Q300 cover that you do not have to fold tables?

The tables on my Q220 fold up and lie on the grate. There is a slot on the lid so it can close with the tables folded over the grate. I just looked at the manual for the 300 series. The slot is there but the mount for the tables is entirely different and the tables on that do fold down.

    Christmas Smoke on the OTG

Without knowing how you're trying to post pictures it's hard to say why it's not working. The basic idea is to host the pictures somewhere and post the URL (web address) here using the image button above. (That just embeds it in [IMG] tags. The only trick is that you need a URL to the image...

    First Smoke - Issues

Hi Mike, Welcome to TVWBB. You've gotten lots of good advice here and the only thing I'll add is that getting the best results from your WSM is a skill that you will improve with practice. Do not be disappointed if your first smoke or two (or three) does not work exactly as planned. For the...

Q300 cover that you do not have to fold tables?

Can the bars be fixed so they don't fall out? Perhaps call the Weber support line and see if they can offer suggestions. Welcome to TVWBB.

    Restored a Genesis 3000 - Family Heirloom

Hi Wes, Welcome to TVWBB. Nice work on the cleanup/restoration of that grill. I think it's great that these old grills can be kept in good working condition with a little effort. The hood is porcelain enamel that is usually pretty durable. I've cleaned up a couple black ones using Soft Scrub...

    Bar-B-Kettle/OTG hybrid

Hi Brian Z, I have an older style Platinum (looks like a Performer w/out gas) and I marked what I estimated to be 1/4, 1/2, 3/4 and full open on the ring that holds the ash bucket. The ash sweeper will never provide the fine control that the older style vents do but It works good enough for me.

    Christmas Smoke on the OTG

Sounds like a great Christmas cook! And IMO you do not have to be a judge to evaluate your results. What matters is that you are happy with what you make. Of course it is always nice to get confirmation from family and guests and it sounds like you did. My own plans were a bit more modest. We...

    Great Wife!

Happy anniversary! My lovely bride has been pretty tolerant of my penchant for Weber grills. Partly I think it's because she enjoys what I cook. She's also probably happy that I'm chasing grills rather than girls.
