    Poultry is a sponge for smoke, so you dont need much. I used one chunk of apple for a turkey last year and it was more than enough.

    LOL good catch Todd. I always foil my empty water pan for easier clean up so i always say "empty foiled" by default, but yeah no drips if bird is in a pan so no foil required for this one. What type of heat were you able to get? how long? how much charcoal? I'm thinking of starting with one...

    Do you have probe therms to monitor temps? As long as you set alarms you should be ok doing an overnighter.

    Spot on. I have a similar set up as the OP and it works great. I use top grate of this set up not the bottom. 4" above the cooking grate gets the pie close to lid to cook top of pie but still allows lid to close without issue. http://weberkettleclub.com/forums/bbq-food-pics/pizza-19051/

    Can you reheat over sternos is in steamer trays? If you refrigerate and then reheat Monday that's your best bet

    Deep down i agree. I got the pitmaster before i had the WSM. It was primarily for smoking on a kettle but it was a PIA to install and remove on a kettle with enclosed ash catcher and a table. I realized it was a perfect fit for the WSM and it is and it does a good job on long cooks (8+ hours)...

    BB's flat on 18 should fit ok. As mentioned above rolling is a good alternative to racks.
