Butts at Costco - What else should I get?

Hey Jerry - Congratulations! Costco has a Foodsaver (4800 I think) that goes on sale twice a year and is a great addition to the kitchen - Usually sells for $150 and look for it at $120. All their beef is very good. The whole tenderloins (choice cut) are excellent and if you can peel them...

    Panzanese steak on 26 OTG

La bistecca è fantastico!! I had Panzanese at Dario Cecchini's in Panzano and yours looks better than his! Beautiful! Here I am at Dario's getting ready for a feast! Was there with 3 other couples - all our wives were celebrating their birthdays in Tuscany. Best buddy's Jim, Scott and Mikal...

    Suggestions for first rotisserie?

Fantastic looking birds!! I'll add a half chimney of lit briquettes at the end of the cook for another 10 to 15 minutes and that really crisps up the skin. Maybe give the skin a bit of basting from the juices below as well. A bit more work, but the results are great.

Question: Long Term Durability of the Finish

I prefer the black porcelain enamel as a look over SS. I have a black EP-330 and love the look. When it comes to different colored porcelain finishes, I've found out that Weber first coats their kettles in black and then applies the final color porcelain as a second treatment. I think that's...

    Friday's Follies

Thanks everyone for the kind words. I make wings about every other week and I think the Chef Merito's is my favorite dry rub. Hey Mark; thank you. I do let the wings come up to room temp and blot them with paper towels before dusting. Nothing else really special - cook 'em indirect for...

    Friday's Follies

Nothing complex but all good. My sister sent me a care package from Bobby Nelson's Cheese Shop in Kenosha, WI. Great appetizer!! Simple stuff here.... Just some wings dusted with Chef Merito's seasoning. Getting there! We're probably just past the 1 hour mark - indirect and 325...

Defrosting chicken I'm doing something wrong

For me it takes a minimum of two and a half days in the fridge for a 5lb bird. I'll pull it and rinse it a couple hours before cooking as well as let it sit at room temperature. This Sunday I'm deboning a whole chicken and it's much easier to work with when fully defrosted.

    Going to get a Foodsaver

Hey Mark..... I picked one of these up at Costco last year and have been very happy with it. Bad news though is that the sale ends today. Seems they go on sale there about twice a year.

    Hibachi grill recommendations?

I like the Lodge as well, but it is a lot more $ and don't know that the functionality is improved by that. You can probably pick one up for less at HD or other grill center.
